Herzhafter Bergbauern Auflauf: goldbraune Brotkruste, saftig-würzige Schinken- und Käseschichten, cremig-milchige Eiermasse. Zart schmelzend, duftend, knusprig – ein deftiger Genuss für alle Sinne.

  • 500 g Weißbrot
  • 500 g Schinken oder Salami
  • 500 g Gouda Käse
  • ½ Liter Milch
  • 2 Eier
  • 2 Esslöffel Mehl
  • Salz
  • Pfeffer
  • Petersilie

Instructions

  1. Preheat your oven to 200°C (392°F) so it is ready for baking the casserole.
  2. Cut the Weißbrot (white bread) into small cubes, roughly 1–2 centimeters in size. Place the bread cubes in a large mixing bowl.
  3. Cut the Schinken (ham) or Salami into small cubes, similar in size to the bread cubes. Add them to the bowl with the bread.
  4. Cut the Gouda cheese into small cubes, about the same size as the bread and meat. Add the cheese cubes to the mixing bowl with the bread and meat.
  5. Gently toss the bread, ham or salami, and cheese cubes together in the bowl until they are evenly mixed.
  6. Grease a large, deep baking dish or ovenproof pan with a little butter or oil to prevent sticking.
  7. Transfer the bread, ham or salami, and cheese mixture evenly into the prepared baking dish, spreading it out so the top is level.
  8. In a separate bowl, crack the eggs and whisk them thoroughly.
  9. Add the milk and the flour to the eggs, and whisk until the mixture is smooth and free of lumps.
  10. Season the egg-milk mixture generously with salt and freshly ground black pepper to taste.
  11. Finely chop a small handful of fresh parsley. Add the chopped parsley to the egg-milk mixture and stir to combine.
  12. Pour the egg-milk-parsley mixture evenly over the bread, ham or salami, and cheese mixture in the baking dish, ensuring that all the pieces are moistened by the liquid.
  13. If needed, gently press down the mixture with a spatula or spoon to help the liquid soak in and cover the ingredients.
  14. Cover the baking dish with a lid or aluminum foil to prevent over-browning during the first part of baking.
  15. Place the baking dish in the preheated oven and bake at 200°C (392°F) for about 30 minutes.
  16. After 30 minutes, remove the lid or foil and continue baking uncovered for an additional 15 minutes, or until the top is golden brown and the casserole is set in the center.
  17. Once baked, remove the casserole from the oven and allow it to cool for a few minutes before slicing.
  18. Garnish with additional fresh parsley if desired, and serve hot with a fresh green salad on the side.

Notes

You can use any type of hearty white bread for this recipe, such as a rustic loaf or a baguette. If you prefer a stronger flavor, try using a mix of ham and salami, or substitute with smoked bacon. Gouda cheese melts beautifully, but you can experiment with other semi-hard cheeses like Emmental or Edam. For a vegetarian version, simply omit the meat and add sautéed mushrooms or roasted vegetables. Leftovers can be reheated in the oven or microwave.
