- 150 g Crème fraîche

Instructions
- Remove the frozen puff pastry sheets from the package and lay them flat on a clean surface. Allow them to thaw completely at room temperature, which may take about 15-20 minutes. Once thawed, cut each sheet in half to create smaller rectangles. While the pastry is thawing, prepare the filling.
- Dice the cooked ham into small, bite-sized pieces. In a medium mixing bowl, combine the diced ham, Crème double, Crème fraîche, and 150 g of the grated Gouda cheese. Mix thoroughly until all ingredients are well incorporated. Season the mixture generously with salt, freshly ground black pepper, and a pinch of sugar to balance the flavors. Taste the filling and adjust the seasoning as needed.
- Preheat your oven to 200°C (392°F) with the oven rack in the middle position. Line a baking tray with parchment paper to prevent the pastry from sticking.
- Take one thawed and halved puff pastry sheet. Fold it in half to form a square or triangle, depending on the shape you want. Press and seal two sides of the pastry using your fingers or a fork, leaving one side open to create a pocket.
- Spoon a generous amount of the ham and cheese filling into the open pocket of each pastry. Do not overfill, as this may cause the filling to leak during baking. Once filled, seal the open edge firmly by pressing it with your fingers or a fork, ensuring the filling is securely enclosed and the edges are well sealed.
- Place the filled pastry pockets onto the prepared baking tray, leaving enough space between each to allow for puffing up during baking. Sprinkle the remaining 50 g of grated Gouda over the tops of each pastry for a cheesy golden crust.
- Transfer the baking tray to the preheated oven and bake the puff pastry pockets on the middle rack for about 15 minutes, or until the pastries are puffed up and the tops are golden brown and crispy.
- Remove the tray from the oven and let the pastries cool for a few minutes before serving. Serve the Blätterteigtaschen warm as a savory snack, appetizer, or light meal.
Notes
For best results, make sure the puff pastry is fully thawed before working with it to prevent cracking. You can experiment with different types of cheese or add fresh herbs like chives or parsley to the filling for extra flavor. These pastries are best enjoyed fresh from the oven, but they can also be reheated briefly in the oven to restore their crispiness.
