Description

Luftig-leichter Käsekuchen mit zartem Schmelz: goldgelb gebacken, cremig im Inneren, feine Vanille- und Zitrusnoten, dezente Süße. Jeder Bissen zergeht samtig-weich auf der Zunge – unwiderstehlich köstlich.

  • 220 g Margarine
  • 220 g Zucker
  • 1 kg Quark
  • 5 Eier
  • 120 g Mehl
  • ½ Packung Backpulver
  • 2 Packung Vanillezucker
  • etwas Zitronensaft

Instructions

  1. Preheat your oven to 180°C (356°F) using both top and bottom heat. Prepare a springform pan (approximately 26 cm in diameter) by greasing it lightly with margarine or lining the bottom with parchment paper to prevent sticking.
  2. In a large mixing bowl, combine the margarine and sugar. Beat them together until the mixture is creamy and pale, making sure the sugar is well incorporated into the margarine.
  3. Add the eggs, one at a time, to the bowl. Beat well after each addition to ensure the eggs are fully blended into the mixture.
  4. Add the quark to the mixture and blend thoroughly until the mixture is smooth and homogeneous. Ensure there are no lumps of quark remaining.
  5. In a separate bowl, mix the flour with the baking powder and vanilla sugar. Gradually add this dry mixture to the wet ingredients, stirring constantly to avoid lumps. Mix until just combined and the batter is smooth.
  6. Add a splash of fresh lemon juice to the batter and stir to combine. This will enhance the flavor and add a subtle tanginess.
  7. If you wish to include fruit, gently fold in mandarin segments or pitted cherries at this stage, being careful not to overmix.
  8. Pour the finished batter evenly into the prepared springform pan. Smooth the top with a spatula or the back of a spoon to ensure an even surface.
  9. Place the pan in the preheated oven and bake for approximately 1 hour, or until the top is golden brown and the center is set. To check for doneness, insert a toothpick into the center of the cake; it should come out mostly clean.
  10. Once the baking time is up, turn off the oven but leave the cake inside with the oven door slightly ajar. Allow the cake to cool completely in the oven—this gradual cooling process helps prevent the cheesecake from collapsing or cracking.
  11. After the cake has cooled fully, carefully remove it from the oven and take off the springform ring. Transfer the cake to a serving plate. Slice and serve as desired. Enjoy your Blitz Käsekuchen!

Notes
