  • 120 g Zucker
  • halbe Packung Backpulver
  • 720 g Quark
  • 4 Eier
  • 120 g Mehl
  • 2 Packung Vanillezucker
  • etwas Zitronensaft

Instructions

  1. Preheat your oven to 170° C with both top and bottom heat (Ober-/Unterhitze) to ensure it is at the correct temperature when you are ready to bake.
  2. Prepare a springform pan (either 24 cm or 26 cm in diameter) by lightly greasing it with margarine or lining it with parchment paper to prevent the cake from sticking.
  3. In a large mixing bowl, add the margarine, sugar, half a packet of baking powder, quark, eggs, flour, vanilla sugar, and a splash of lemon juice.
  4. Using an electric hand mixer or a stand mixer, mix all the ingredients together on medium speed until you achieve a smooth, lump-free batter. Make sure to scrape down the sides of the bowl with a spatula to incorporate all ingredients evenly.
  5. Pour the finished batter into the prepared springform pan, smoothing the top with a spatula so that the surface is even.
  6. Place the springform pan on the middle rack of the preheated oven and bake the cake at 170° C for approximately 1 hour. The cake should turn slightly golden on top and set in the center.
  7. After baking, turn off the oven and open the oven door slightly. Allow the cheesecake to cool down inside the oven for about 30-60 minutes. This gradual cooling helps prevent the cake from collapsing or cracking.
  8. Once the cake has cooled in the oven, remove it and let it come to room temperature. Carefully run a knife around the edge of the pan before removing the springform rim.
  9. If desired, you can enjoy the cake as is or fold in drained canned fruits such as mandarin slices, sour cherries, or cherries directly into the batter before baking for a fruity variation.

For added flavor and texture, feel free to fold in your favorite fruits such as canned mandarin oranges, sour cherries, or sweet cherries into the batter before baking. Letting the cheesecake cool gradually in the oven is essential to prevent it from sinking or cracking. This cake tastes great both plain or with a light dusting of powdered sugar before serving. Serve chilled or at room temperature for best results.
