- 120 g Zucker

Instructions
- Preheat your oven to 170° C with both top and bottom heat (Ober-/Unterhitze) to ensure it is at the correct temperature when you are ready to bake.
- Prepare a springform pan (either 24 cm or 26 cm in diameter) by lightly greasing it with margarine or lining it with parchment paper to prevent the cake from sticking.
- In a large mixing bowl, add the margarine, sugar, half a packet of baking powder, quark, eggs, flour, vanilla sugar, and a splash of lemon juice.
- Using an electric hand mixer or a stand mixer, mix all the ingredients together on medium speed until you achieve a smooth, lump-free batter. Make sure to scrape down the sides of the bowl with a spatula to incorporate all ingredients evenly.
- Pour the finished batter into the prepared springform pan, smoothing the top with a spatula so that the surface is even.
- Place the springform pan on the middle rack of the preheated oven and bake the cake at 170° C for approximately 1 hour. The cake should turn slightly golden on top and set in the center.
- After baking, turn off the oven and open the oven door slightly. Allow the cheesecake to cool down inside the oven for about 30-60 minutes. This gradual cooling helps prevent the cake from collapsing or cracking.
- Once the cake has cooled in the oven, remove it and let it come to room temperature. Carefully run a knife around the edge of the pan before removing the springform rim.
- If desired, you can enjoy the cake as is or fold in drained canned fruits such as mandarin slices, sour cherries, or cherries directly into the batter before baking for a fruity variation.
