  • 120 g Zucker
  • halbe Packung Backpulver
  • 720 g Quark
  • 4 Eier
  • 120 g Mehl
  • 2 Packung Vanillezucker
  • etwas Zitronensaft

Instructions

  1. Preheat your oven to 170°C (338°F) with both upper and lower heat settings. Prepare a springform pan (either 24 or 26 cm in diameter) by greasing it lightly with margarine or lining it with parchment paper to prevent sticking.
  2. In a large mixing bowl, add the margarine, sugar, baking powder (use half a packet), quark, eggs, flour, vanilla sugar, and a splash of lemon juice. Ensure all ingredients are at room temperature for best mixing results.
  3. Using an electric hand mixer or a stand mixer, thoroughly combine all the ingredients. Mix on medium speed until the batter is smooth and no lumps remain. Scrape down the sides of the bowl as needed to incorporate all the ingredients evenly.
  4. Pour the finished batter into the prepared springform pan and spread it out evenly with a spatula to ensure a flat surface.
  5. If you wish to add fruit, gently fold in drained mandarin orange segments, sour cherries, or regular cherries into the batter before pouring it into the pan. Evenly distribute the fruit for a consistent texture.
  6. Place the springform pan in the preheated oven on the middle rack. Bake the cake at 170°C (338°F) for approximately 1 hour, or until the top is lightly golden and a skewer inserted into the center comes out clean.
  7. Once baking is complete, turn off the oven and leave the cake inside with the door slightly open. Allow the cake to cool slowly in the oven for at least 30 minutes. This helps prevent the cake from collapsing and ensures a creamy, stable texture.
  8. After the cake has cooled in the oven, remove it and let it come to room temperature. Carefully remove the cake from the springform pan and transfer it to a serving platter.
  9. Serve the Blitz Käsekuchen plain or, if desired, dust with powdered sugar or accompany with fresh fruit. Store leftovers in the refrigerator, covered, for up to 3 days.

Notes

You can personalize your Blitz Käsekuchen by adding your favorite fruit such as mandarins, cherries, or sour cherries directly into the batter before baking. Be sure to drain canned fruits thoroughly to avoid excess moisture in the cake. For a fresher flavor, add a bit more lemon juice or some grated lemon zest.
