- 120 g Zucker
- 0.5 Packung Backpulver
- 720 g Quark
- 4 Eier

Instructions
- Preheat your oven to 170°C (338°F) with both top and bottom heat (Ober-/Unterhitze). Prepare a 24 or 26 cm (9-10 inch) springform pan by greasing it lightly with margarine or lining it with parchment paper to prevent sticking.
- In a large mixing bowl, add the margarine, sugar, baking powder, quark, eggs, flour, vanilla sugar, and a splash of lemon juice. Using a hand mixer or stand mixer, blend all the ingredients together thoroughly until you have a smooth, homogeneous batter. Make sure there are no lumps of flour or margarine remaining.
- If desired, gently fold in fruit such as mandarin orange segments, sour cherries, or regular cherries into the batter at this stage for additional flavor and texture. Stir carefully to evenly distribute the fruit without breaking it apart.
- Pour the prepared batter into the greased or lined springform pan. Use a spatula to smooth the top and ensure the batter is evenly spread.
- Place the springform pan in the preheated oven and bake for approximately 1 hour at 170°C (338°F). The cake should be lightly golden on top, and a toothpick inserted into the center should come out clean or with only a few moist crumbs.
- After baking, turn off the oven and leave the cake inside with the door slightly ajar. Allow the cake to cool slowly in the oven for at least 30-60 minutes. This gradual cooling helps prevent the cheesecake from collapsing or cracking.
- Once the cake has cooled in the oven, remove it and let it come to room temperature. Carefully run a knife around the edge of the springform pan before releasing the sides to avoid tearing the cake.
- Transfer the cheesecake to a serving platter. Optionally, dust with powdered sugar or top with additional fresh fruit before serving. Slice and enjoy!

For extra flavor, you can add your favorite fruits such as mandarin oranges, sour cherries, or other berries to the batter before baking. Letting the cheesecake cool slowly in the oven is crucial to prevent it from sinking or cracking. The cake is delicious served plain or with a light dusting of powdered sugar.
