Zartes Kasseler und knackiger Brokkoli verschmelzen mit cremiger Sahnesoße, Bandnudeln und goldbraun überbackenem Gouda zu einem herzhaften, saftigen Auflauf mit köstlicher Kruste und aromatischem Duft.


Ingredients

  • 350 g Kasseler
  • 125 g Schlagsahne
  • 500 g Brokkoli, tiefgekühlt
  • 30 g Mehl
  • 30 g Butter
  • 250 g Bandnudeln
  • 375 ml Gemüsebrühe
  • 125 g Gouda, gerieben
  • 1 EL Öl
  • Salz und Pfeffer

Instructions

  1. Bring a large pot of salted water to a boil. Add the frozen broccoli to the boiling water and cook for about 10 minutes, until the broccoli is tender. Drain the broccoli in a colander and set aside.
  2. While the broccoli is cooking, bring another large pot of salted water to a boil. Add the bandnudeln (ribbon noodles) and cook for about 8 minutes, or until they are al dente. Once cooked, drain the noodles thoroughly and set aside.
  3. Cut the Kasseler (smoked pork loin) into small cubes. Heat 1 tablespoon of oil in a large frying pan over medium-high heat. Add the Kasseler cubes and sauté for a few minutes, stirring occasionally, until the meat is lightly browned on all sides. Remove the pan from the heat and set the Kasseler aside.
  4. In a medium saucepan, melt 30 g of butter over medium heat. Add 30 g of flour and stir constantly for about 1 minute to create a roux. Gradually pour in 375 ml of vegetable broth while whisking continuously to prevent lumps from forming. Add 125 g of heavy cream while continuing to whisk. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for a few minutes until the sauce thickens. Season the sauce with salt and pepper to taste. Stir in half of the grated Gouda cheese (about 62 g) until it has melted completely and the sauce is smooth.
  5. In a large mixing bowl, combine the cooked broccoli, drained noodles, and sautéed Kasseler cubes. Gently mix everything together to distribute the ingredients evenly.
  6. Preheat your oven to 200°C (convection/ Umluft). Lightly grease a large casserole or baking dish.
  7. Transfer the broccoli, noodle, and Kasseler mixture into the prepared casserole dish. Pour the cheese sauce evenly over the mixture, making sure that all ingredients are well coated with the sauce.
  8. Sprinkle the remaining half of the grated Gouda cheese evenly over the top of the casserole.
  9. Place the casserole dish in the preheated oven and bake for 25 to 30 minutes, or until the top is golden brown and bubbling and the casserole is heated through.
  10. Remove the casserole from the oven. Allow it to cool for a few minutes before serving. Enjoy your Brokkoli-Kasseler-Auflauf while hot.

Notes

You can substitute fresh broccoli for frozen if desired; just adjust the cooking time accordingly. Feel free to use other types of cheese such as Emmental or cheddar for a different flavor profile. For a crispier topping, you can add some breadcrumbs mixed with a little melted butter on top before baking. Serve the casserole with a fresh green salad for a complete meal.
