  • 300 g Mehl
  • 2 Pck. Vanillinzucker
  • 2 EL Zucker
  • ½ Pck. Backpulver
  • 1 Prise Salz
  • 250 ml Buttermilch
  • 3 Stk. Eier
  • 1 EL Butterschmalz
  • etwas Puderzucker

Instructions

  1. Begin by melting the butter or margarine in a small saucepan over low heat, or in the microwave. Set aside to cool slightly.
  2. In a large mixing bowl, combine the flour, vanillin sugar, regular sugar, baking powder, and a pinch of salt. Whisk together until all the dry ingredients are evenly incorporated.
  3. Separate the eggs, placing the yolks in a small bowl and the whites in another clean, dry bowl.
  4. Add the egg yolks, melted butter, and buttermilk to the dry ingredients. Use a hand mixer or whisk to blend everything together until a smooth, lump-free batter forms.
  5. With a clean whisk or electric mixer, beat the egg whites on high speed until they form stiff peaks. This means that when you lift the beaters out, the egg whites should stand up straight and not collapse.
  6. Gently fold the beaten egg whites into the batter using a spatula. Carefully incorporate them in batches, taking care not to deflate the mixture, until no streaks of egg white remain. The batter should become light and airy.
  7. Preheat your waffle iron according to the manufacturer’s instructions. Once hot, lightly brush the plates with butterschmalz (clarified butter) to prevent sticking and to give the waffles a crisp, golden finish.
  8. Pour enough batter onto the center of the waffle iron to just cover the surface (usually about 2-3 tablespoons, depending on the size of your waffle iron). Close the lid and cook the waffle until it is golden brown and crisp. This typically takes 3-5 minutes but may vary depending on your appliance.
  9. Carefully remove the finished waffle and place it on a wire rack to prevent sogginess. Repeat the process with the remaining batter, brushing the waffle iron with more butterschmalz as needed between batches.
  10. Serve the warm buttermilk waffles immediately, dusted generously with powdered sugar. Enjoy them plain or with your favorite toppings such as fresh fruits, whipped cream, or syrup.

Notes

For extra flavor, you can add a hint of grated lemon zest or a dash of cinnamon to the batter. Make sure to fold in the egg whites gently for the fluffiest texture. Serve the waffles immediately for the best crispness, as they tend to soften if left to stand. Leftover waffles can be reheated in a toaster or oven for a few minutes to restore their crispiness.
