- 750 g fresh strawberries
- 2 tablespoons lemon juice
- 80 g powdered sugar
- 250 g mascarpone cheese
- 250 g quark (20% fat)
- 200 g ladyfingers (Löffelbiskuit)
Instructions
- Begin by washing the strawberries thoroughly under cold running water. Remove the green stems and cut the strawberries into halves or quarters, depending on their size.
- Place the prepared strawberries in a blender or food processor. Add the lemon juice and powdered sugar to the strawberries. Blend everything together until you have a smooth and uniform strawberry purée.
- Pour the strawberry purée into a bowl. Reserve approximately one-third of the purée and set it aside. In a separate large mixing bowl, combine the mascarpone cheese and quark. Add the remaining two-thirds of the strawberry purée to the mascarpone-quark mixture. Use an electric mixer or a whisk to beat everything together until the mixture is smooth, creamy, and well combined.
- Take a large serving dish or a rectangular glass dish. Begin assembling the tiramisu by placing a single layer of ladyfingers on the bottom of the dish. Arrange them closely together so they cover the entire base.
- Spoon a portion of the mascarpone-quark-strawberry cream mixture evenly over the layer of ladyfingers. Use a spatula to spread the cream smoothly and ensure it covers all the ladyfingers.
- Repeat the layering process: add another layer of ladyfingers on top of the cream, followed by another layer of the strawberry-mascarpone cream. Continue layering until you run out of ingredients, finishing with a layer of cream on top.
- Finally, pour the reserved one-third of the pureed strawberries over the top layer of cream. Use a spoon or spatula to gently spread the strawberry purée evenly across the surface, creating a vibrant and appetizing finish.
- Cover the dish with plastic wrap or a lid and place it in the refrigerator. Allow the tiramisu to chill for at least 3 hours, or preferably overnight, so the flavors meld and the dessert sets properly.
- Just before serving, you can optionally decorate the tiramisu with fresh strawberry slices or a dusting of powdered sugar for an extra special touch. Use a sharp knife or serving spoon to portion and serve the chilled strawberry tiramisu.
Notes
For best results, prepare the strawberry tiramisu a day in advance and let it chill overnight in the refrigerator. This allows the ladyfingers to fully absorb the flavors and results in a perfectly creamy, set dessert. If you prefer, you can also layer the tiramisu in individual glasses for a beautiful single-serve presentation. Make sure to use ripe, flavorful strawberries for the best taste.
