  • 1 kg Erdbeeren
  • 750 g Mascarpone
  • 500 g Magertopfen (quark or low-fat curd cheese)
  • 2 EL Zitronensaft (2 tablespoons lemon juice)
  • 120 g Staubzucker (powdered sugar)
  • 40 Stück Biskotten (ladyfingers)

Instructions

  1. Wash the strawberries thoroughly under cold running water and remove the stems. Set aside a handful of strawberries for decoration if desired. Place the remaining strawberries in a large mixing bowl.
  2. Add the lemon juice and powdered sugar to the bowl with the strawberries. Use a blender or immersion blender to puree the mixture until smooth. This will create a sweet, fruity strawberry sauce.
  3. In a separate large mixing bowl, combine the mascarpone and magertopfen (quark or low-fat curd cheese). Add two-thirds of the strawberry puree to the mascarpone mixture. Use an electric mixer or whisk to blend everything together until you achieve a smooth and creamy consistency. Set aside the remaining third of the strawberry puree for later.
  4. Choose a rectangular or square dish suitable for layering desserts. Begin by arranging a layer of ladyfingers (Biskotten) on the bottom of the dish, making sure to cover the entire surface. You may need to break some ladyfingers to fit them snugly.
  5. Spoon a portion of the mascarpone-strawberry cream mixture evenly over the layer of ladyfingers, smoothing it out with a spatula.
  6. Add another layer of ladyfingers on top of the cream, arranging them in the same manner as before.
  7. Continue layering by alternating between the mascarpone-strawberry cream and ladyfingers until you have used all the ingredients, finishing with a final layer of the cream mixture on top.
  8. Pour the reserved strawberry puree evenly over the top layer of cream, spreading it out to cover the entire surface. This will give the tiramisu a vibrant, fruity finish.
  9. Cover the dish with plastic wrap or a lid and place it in the refrigerator. Allow the tiramisu to chill for at least 6 hours, or overnight if possible, so that the flavors can meld and the dessert can set properly.
  10. Before serving, optionally decorate the top with the reserved fresh strawberries by slicing them and arranging them attractively. Cut into portions and serve chilled.

Notes

For best results, prepare the tiramisu a day in advance to allow the flavors to fully develop. You can use more or fewer ladyfingers depending on the size of your dish. Make sure to use ripe, sweet strawberries for maximum flavor. If you like, you can drizzle a little strawberry liqueur or orange juice over the ladyfingers before layering to add extra moisture and flavor. This tiramisu contains no eggs or alcohol, making it suitable for children and those who avoid raw eggs.
