- 75 g Quark (Magerstufe)
- 3 EL Milch
- 200 g reifer Brie
- ½ TL Salz
- ½ TL Backpulver
- 1 Messerspitze Kardamom, gemahlen
- 3 EL Sonnenblumenöl
- 150 g Mehl
- 2 Frühlingszwiebeln
Instructions
- Begin by preparing the filling. Clean the spring onions thoroughly by removing the root ends and any wilted outer layers. Slice the spring onions into very fine rings and set them aside.
- Take the Brie cheese and remove the outer rind carefully. Cut the Brie into small pieces and place them in a mixing bowl. Using a fork, mash the Brie until it becomes a smooth, creamy texture.
- Add the ground cardamom and the finely sliced spring onion rings to the mashed Brie. Mix everything thoroughly so the flavors are evenly distributed. Set the cheese filling aside.
- Prepare the dough by combining the quark, milk, salt, and sunflower oil in a separate large bowl. Stir the mixture vigorously until all the ingredients are well blended and the mixture is smooth.
- In another bowl, whisk together the flour and baking powder to ensure even distribution. Gradually add the flour mixture to the wet ingredients and knead everything together, either by hand or with a dough hook, until a soft, pliable, and smooth dough forms. If the dough feels too sticky, add a sprinkle of flour; if it is too dry, add a small splash of milk.
- Lightly flour your work surface and roll the dough out to a rectangle about 3 cm thick, approximately 40 x 20 cm in size. Use a sharp knife or a pizza cutter to divide the dough into four large triangles.
- Spoon an even amount of the prepared cheese filling onto the wide base of each triangle. Spread it gently, keeping it on the lower half and leaving the edges clear for sealing.
- Starting from the base, carefully roll each triangle towards the pointed end, enclosing the filling as you go. Press the ends gently to seal and then bend each rolled piece into a crescent (horn) shape. Place the shaped Hörnchen on a baking tray lined with parchment paper.
- Brush the tops of the Hörnchen with a little whipped cream (Schlagsahne) to help them brown beautifully during baking. If desired, sprinkle with sesame seeds for extra flavor and crunch.
- Preheat your oven to 180°C (top and bottom heat). Place the tray in the oven and bake the Hörnchen for 15–18 minutes, or until they are golden brown and crisp on the outside.
- Remove the Hörnchen from the oven and allow them to cool slightly on a wire rack. Serve warm or at room temperature as a delicious snack or appetizer.
Notes
For a richer flavor, you can experiment with different types of cheese or add fresh herbs such as parsley or chives to the filling. These Hörnchen are best enjoyed fresh from the oven but can also be reheated gently. If you like extra crunch, sprinkle sesame or poppy seeds on top before baking.
