Description

Goldgelbe, zarte Quark-Fächer mit knusprigem Biss, eine herrlich lockere, buttrige Krume und umhüllt von einer aromatischen Zimtzuckerkruste – warm duftend, leicht süß und unwiderstehlich saftig.

  • 400 g Quark
  • 250 g Butter (Zimmertemperatur)
  • 480 g Mehl
  • 1 TL Backpulver
  • 1 Prise Salz
  • Zimtzucker zum Wälzen

Instructions

  1. Begin by preparing all your ingredients. Ensure the butter is at room temperature so it can be easily incorporated into the dough. In a large mixing bowl, combine the Quark, softened butter, a pinch of salt, flour, and baking powder.
  2. Using your hands or a sturdy spoon, mix all the ingredients together until a smooth dough forms. Knead the dough gently until all the ingredients are well combined and the dough is no longer sticky. Shape the dough into a large ball.
  3. Divide the dough ball into several smaller, evenly sized pieces. Take each piece and roll it between your hands to form a small ball.
  4. On a lightly floured surface, use a rolling pin to roll each small dough ball into a flat, round disk, about 0.5 cm thick. Try to keep the disks as even and circular as possible.
  5. To create the classic ‚fan‘ (Fächer) shape, take each round disk and fold it in half to form a semicircle. Then, fold it in half again to make a quarter-circle shape. Gently press so the layers stick together but maintain the fan-like appearance.
  6. Pour a generous amount of Zimtzucker (cinnamon sugar) onto a plate. Take each folded dough fan and roll or press it into the cinnamon sugar so that all sides are well coated. If you prefer, you can use vanilla sugar instead of cinnamon sugar.
  7. Place the coated dough fans onto a baking tray lined with baking paper, leaving some space between each piece as they will spread slightly during baking.
  8. Preheat your oven to 180°C (356°F) with both top and bottom heat. Once the oven is hot, place the tray on the middle rack.
  9. Bake the Quark-Fächer for about 30 minutes, or until they are golden brown and cooked through. Keep an eye on them during the last few minutes to prevent overbaking.
  10. Remove the finished Quark-Fächer from the oven and let them cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely. Serve them warm or at room temperature and enjoy!

Notes

If you do not like cinnamon, you can substitute the cinnamon sugar with vanilla sugar for a different flavor. Make sure not to overwork the dough, as this can make the finished pastry tough. Keep an eye on the Quark-Fächer while baking, as oven temperatures may vary and they can brown quickly towards the end of the baking time. These pastries are best enjoyed fresh but can be stored in an airtight container for a couple of days.
