  • 1 pinch salt
  • 480g all-purpose flour
  • 400g Quark (fresh cheese or baking quark)
  • 1 teaspoon baking powder
  • Zimtzucker (cinnamon sugar), for coating (alternatively, use vanilla sugar)

Instructions

  1. Prepare all your ingredients by bringing the butter to room temperature. In a large mixing bowl, combine the butter, quark, a pinch of salt, flour, and baking powder. Mix the ingredients thoroughly with your hands or a sturdy spatula until a smooth, uniform dough forms. Knead the dough briefly until it is well combined and forms a cohesive ball.
  2. Place the dough ball on a lightly floured surface. Using a knife or a dough scraper, divide the dough into small, equal-sized pieces. Take each piece and roll it between your palms to form a small ball. Next, use a rolling pin to roll each ball into a round, flat disc, about 1/2 cm thick.
  3. To shape the Fächer (fan shapes), take each round disc and fold it in half to form a semicircle. Then fold it once more to create a quarter-circle or fan shape. Press the tip gently to help the layers stick together.
  4. Pour a generous amount of Zimtzucker (cinnamon sugar) onto a plate. Take each shaped fan and gently roll or press them into the cinnamon sugar so they are evenly coated on both sides. If you prefer, you can use vanilla sugar instead of cinnamon sugar for a different flavor.
  5. Line a baking tray with parchment paper. Arrange the coated fan-shaped pastries on the tray, leaving some space between each piece to allow for slight expansion during baking.
  6. Preheat your oven to 181°C (approximately 358°F). Once the oven is hot, place the tray in the oven and bake the Quark-Fächer for about 30 minutes, or until they are golden and crisp. Keep an eye on them in the final minutes to prevent overbaking.
  7. Remove the tray from the oven and let the Quark-Fächer cool for a few minutes on the tray. Transfer them to a wire rack to cool completely. Serve the pastries warm or at room temperature, and enjoy their delicate, flaky texture.

Notes

If you do not enjoy the taste of cinnamon, you can substitute the cinnamon sugar with vanilla sugar for a milder, sweeter flavor. For the best results, ensure that the butter is at room temperature before mixing to achieve a smooth dough. These pastries are best enjoyed fresh but can be stored in an airtight container for several days. You can also dust them with extra powdered sugar for added sweetness before serving.
