- 250g Butter (at room temperature)
- 1 pinch of salt
- 480g flour
- 400g quark
- 1 teaspoon baking powder
- Cinnamon sugar for coating (alternatively vanilla sugar)
Instructions
- Prepare all your ingredients by measuring out the butter, flour, quark, baking powder, and salt. Allow the butter to come to room temperature to ensure it mixes well into the dough.
- In a large mixing bowl, combine the room-temperature butter, quark, pinch of salt, flour, and baking powder. Use your hands or a stand mixer fitted with a dough hook to mix all the ingredients together until a smooth, uniform dough forms. Shape the dough into a large ball.
- Transfer the dough onto a lightly floured work surface. Divide the dough into small, even pieces – about the size of a walnut. Take each piece and roll it between your hands to form a smooth ball.
- Using a rolling pin, flatten each dough ball into a round disc, about 5-7mm thick. Carefully fold each disc in half to create a semicircle, then fold once more to form a quarter-circle, creating a fan-like shape.
- Pour some cinnamon sugar (or vanilla sugar if preferred) onto a flat plate. Gently press each dough fan into the cinnamon sugar, ensuring both sides are well coated.
- Place the coated dough fans onto a baking tray lined with parchment paper, leaving a little space between each piece to allow for slight expansion during baking.
- Preheat your oven to 181°C (about 358°F) while you finish preparing the dough fans.
- Place the baking tray with the dough fans into the preheated oven and bake for approximately 30 minutes. Keep an eye on them during the last few minutes to ensure they become golden brown but do not burn.
- Once baked, remove the quark fans from the oven and let them cool on a wire rack until they reach room temperature. Serve and enjoy your delicious, aromatic Quark-Fächer with Zimtzucker.
Notes
You can substitute cinnamon sugar with vanilla sugar if you prefer a different flavor. For best results, ensure the butter is truly at room temperature before mixing the dough. Watch the pastries closely towards the end of baking, as oven temperatures may vary and the pastries should be golden but not too dark.
