Description

Knuspriger, goldbrauner Blätterteig umhüllt eine cremige Schicht aus Frischkäse, würzigem Schinken und zarten Frühlingszwiebeln – herzhaft, saftig, mit feiner Pfeffernote und aromatischer Frische.

  • 1 bunch spring onions or 2 shallots or onions
  • 1 package cream cheese or sour cream (Schmand)
  • 200 g raw or cooked ham
  • Pepper
  • 1 roll of refrigerated puff pastry
  • A pinch of salt

Instructions

  1. Preheat your oven to 170°C (fan/convection) so that it reaches the correct temperature by the time your rolls are ready to bake.
  2. Peel the spring onions (or shallots or onions), then finely dice them. Cut the ham (whether raw or cooked) into small cubes as well. Place the diced onions and ham into a medium mixing bowl.
  3. Add the cream cheese or sour cream (Schmand) to the bowl with the diced onions and ham. Mix everything together thoroughly until the ingredients are evenly combined and the mixture is creamy.
  4. Season the filling generously with freshly ground black pepper and a pinch of salt. Taste and adjust the seasoning as needed. For extra flavor, you may add a pinch of dried herbs such as Herbes de Provence if desired.
  5. Unroll the puff pastry sheet on a clean work surface. If the pastry comes with baking paper, leave it underneath to make rolling easier.
  6. Evenly spread the prepared ham and cheese mixture over the entire surface of the puff pastry, leaving about 1 cm border along the edges to prevent the filling from spilling out when rolled.
  7. Starting from one long side, carefully roll up the puff pastry with the filling inside, creating a tight log. Try to roll it as evenly and tightly as possible for neat slices.
  8. Using a sharp knife, cut the rolled-up pastry into slices about 3 cm thick. To prevent squashing the rolls, wipe the knife between cuts or use a serrated knife.
  9. Place the slices flat side down on a baking sheet lined with parchment paper, leaving a little space between each roll to allow for puffing during baking.
  10. Place the baking sheet in the preheated oven and bake the rolls for 10 to 15 minutes, or until the pastry is golden brown and crisp. If you prefer them more browned and crispy, bake a few minutes longer, but keep an eye on them to prevent burning.
  11. Once baked, remove the Flammkuchen rolls from the oven and let them cool slightly before serving. They can be enjoyed warm or at room temperature.
