Saftige Frikadellen aus dem Ofen: außen goldbraun und leicht knusprig, innen zart und würzig mit feiner Paprika-Note, aromatischen Kräutern, Zwiebel und einem Hauch Curry – ein unwiderstehlicher Genuss, Tag für Tag.


Ingredients

  • 1 small onion, or 1 cup crispy fried onions
  • 2 tablespoons mustard
  • 3 tablespoons ketchup (curry or tomato ketchup)
  • 3 tablespoons warm water
  • 550 grams mixed ground meat
  • 1 large egg
  • 3 tablespoons paprika powder
  • Some fresh herbs, chopped
  • Salt and pepper, to taste
  • 2 cups breadcrumbs

Instructions

  1. Preheat your oven to 210°C (410°F). Line a baking sheet with parchment paper and set it aside.
  2. In a large mixing bowl, combine the warm water and paprika powder. Stir well until the paprika is fully dissolved in the water, creating a vibrant red mixture.
  3. Add the mustard, ketchup, and egg to the bowl with the paprika mixture. Whisk the ingredients thoroughly until a smooth, creamy base is formed.
  4. Finely chop the onion, or if using crispy fried onions, measure out one cup. Add the onions to the bowl with the wet ingredients.
  5. Add the mixed ground meat, chopped fresh herbs, and breadcrumbs to the bowl. Using clean hands, mix and knead all the ingredients together until everything is evenly incorporated and a uniform meat mixture is formed.
  6. Season the meat mixture generously with salt and pepper according to your taste. Knead the mixture again to ensure the seasoning is distributed throughout.
  7. With slightly damp hands, shape the meat mixture into evenly sized balls or patties, depending on your preference. Place each formed frikadelle onto the prepared baking sheet, ensuring there is a little space between each one for even cooking.
  8. Place the baking sheet in the preheated oven. Bake the frikadellen at 210°C (410°F) for 20 to 30 minutes, depending on their size. Halfway through baking, check the frikadellen and rotate the tray if necessary to ensure even browning. The frikadellen are ready when they have developed a deep golden-brown, crispy exterior and are cooked through in the center.
  9. Remove the frikadellen from the oven and let them rest for a few minutes before serving. They are delicious served hot, and pair well with salads, potatoes, or your favorite sides.

Notes

You can substitute the mixed ground meat with ground poultry to reduce calories and make the frikadellen lighter. For extra flavor, experiment with different herbs such as parsley, chives, or thyme. If you prefer a spicier kick, try adding a pinch of chili powder or cayenne pepper to the mixture. Leftovers can be stored in the refrigerator for several days and taste great cold or reheated.
