Außen goldbraun und knusprig, innen saftig und zart: Diese Frikadellen duften aromatisch nach Paprika, Kräutern und Zwiebeln, schmecken würzig und herzhaft – ein unkompliziertes Ofengericht für die ganze Familie.


Ingredients

  • 600 g mixed ground meat (Hackfleisch, gemischt)
  • 1 large egg
  • 1 small onion, or 1 cup fried onions (Röstzwiebeln)
  • 2 tablespoons mustard
  • 3 tablespoons ketchup (curry or tomato ketchup)
  • 4 tablespoons warm water
  • 3 tablespoons paprika powder
  • some chopped herbs
  • salt
  • pepper
  • 2 cups breadcrumbs

Instructions

  1. Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper to prevent sticking.
  2. In a large mixing bowl, combine the warm water and paprika powder. Stir thoroughly until the paprika has fully dissolved and the liquid is deep red in color.
  3. Add the mustard, ketchup, and egg to the paprika-water mixture. Whisk everything together until you have a smooth, creamy base.
  4. Finely chop the onion. If you are using fried onions (Röstzwiebeln), measure out one cup. Add the chopped onion or fried onions to the bowl.
  5. Add the mixed ground meat, chopped herbs, and breadcrumbs to the bowl with the wet ingredients. Using clean hands, knead the mixture thoroughly until all components are well combined and the mixture is uniform.
  6. Season the mixture generously with salt and freshly ground black pepper. Knead again to ensure the seasoning is evenly distributed throughout the mixture.
  7. With slightly damp hands, shape the meat mixture into evenly sized balls or patties, depending on your preference. Make sure they are all roughly the same size to ensure even cooking.
  8. Place the shaped Frikadellen on the prepared baking sheet, leaving a little space between each one so they bake evenly and get crispy on the sides.
  9. Transfer the baking sheet to the preheated oven and bake the Frikadellen for 20 to 30 minutes. The exact baking time will depend on their size—larger patties may need closer to 30 minutes. Halfway through the cooking time, you can turn them over for even browning if desired.
  10. Bake until the Frikadellen are a rich, dark golden brown on the outside and fully cooked through in the center. They should be nicely crisp on the outside but juicy inside. Remove from the oven and let them rest for a few minutes before serving.

Notes

You can substitute the mixed ground meat with ground poultry (Geflügelhackfleisch) to reduce the calorie count. Feel free to experiment with different herbs or use curry ketchup for a unique flavor twist. These oven-baked Frikadellen are less greasy than their pan-fried counterparts and make a perfect family meal or party snack.
