Description

Saftige Frikadellen, außen goldbraun und knusprig, innen zart und aromatisch dank Senf, Ketchup und Kräutern. Würziger Paprika und geröstete Zwiebeln sorgen für intensiven Geschmack und herzhafte Fülle.


Ingredients

  • 1 kleine Zwiebel, oder eine Tasse Röstzwiebeln
  • 2 EL Senf
  • 3 EL Ketchup (Curry- oder Tomatenketchup)
  • 4 EL Wasser, warm
  • 600 g Hackfleisch, gemischt
  • 2 Eier
  • 3 EL Paprikapulver
  • einige Kräuter, gehackt
  • Salz, Pfeffer und Muskat
  • 2 Tassen Paniermehl

Instructions

  1. Preheat your oven to 210°C (410°F) and line a baking sheet with parchment paper to prevent sticking.
  2. In a large mixing bowl, combine 4 tablespoons of warm water and 3 tablespoons of paprika powder. Stir well until the paprika is fully dissolved and the mixture is smooth.
  3. Add 2 tablespoons of mustard, 3 tablespoons of ketchup (either curry or tomato ketchup), and 2 eggs to the paprika mixture. Whisk everything together thoroughly until you have a creamy, homogeneous base.
  4. Peel and finely chop 1 small onion (or use 1 cup of crispy fried onions if preferred). Add the chopped onions to the bowl.
  5. Add 600 grams of mixed ground meat (Hackfleisch), a handful of freshly chopped herbs of your choice, and 2 cups of breadcrumbs (Paniermehl) to the mixture in the bowl.
  6. Season the mixture generously with salt, pepper, and a pinch of freshly grated nutmeg. Mix everything together with clean hands or a sturdy spoon until all ingredients are evenly incorporated and you have a cohesive, slightly sticky meat mixture.
  7. With damp hands, form the meat mixture into evenly sized balls or patties, each about the size of a golf ball or slightly larger, depending on your preference. Place each frikadelle onto the prepared baking sheet, leaving space between them to allow for even cooking.
  8. Place the baking sheet with the frikadellen in the preheated oven. Bake for 20 to 30 minutes, depending on the size of your frikadellen. For smaller ones, check after 20 minutes; for larger ones, allow up to 30 minutes.
  9. About halfway through the baking time, you can turn the frikadellen to ensure they brown and crisp evenly on all sides.
  10. When the frikadellen are deep golden brown and crispy on the outside and cooked through inside, remove them from the oven. Let them rest for a few minutes before serving. Enjoy them warm, ideally with your favorite side dishes.

Notes

For extra flavor, you can mix different herbs such as parsley, chives, or thyme into the meat mixture. The use of roasted onions provides a sweet, savory note, but fresh onions work just as well. If you prefer spicier frikadellen, add a pinch of chili powder or cayenne. These oven-baked frikadellen are healthier than pan-fried versions and become especially crispy if you let them brown well in the oven. Serve with potato salad, mashed potatoes, or a fresh green salad.
