  • 300 g Heidelbeeren, frisch
  • 300 g Erdbeeren, frisch, in Scheiben
  • 300 g Weintrauben, grün, möglichst kernlos
  • 2 EL Zitronensaft, frisch gepresst
  • 1 TL Zitrone(n) – Schale, abgerieben
  • 250 g Quark
  • 200 ml süße Sahne
  • 50 g Puderzucker
  • 65 g Walnüsse, gehackt

Instructions

  1. Begin by thoroughly washing all the fresh fruits: peaches, blueberries, strawberries, and green grapes. If you are using canned peaches, ensure they are well drained to avoid excess liquid in your salad.
  2. Slice the fresh peaches and strawberries into thin, even slices to ensure uniform layering and easy serving. Remove any stems from the strawberries before slicing.
  3. If the grapes are not seedless, carefully remove the seeds. Leave the grapes whole to maintain texture contrast in the salad.
  4. In a large, clear glass bowl, start layering the fruit to create a visually appealing fruit layer salad. Begin with a layer of peach slices evenly spread on the bottom.
  5. Add a layer of fresh blueberries on top of the peaches, spreading them out evenly to cover the entire surface.
  6. Next, place a layer of strawberry slices evenly over the blueberries, ensuring good coverage.
  7. Finally, add a layer of green, seedless grapes on top of the strawberries. This multi-layered fruit base not only tastes delicious but looks beautiful through the glass bowl.
  8. In a medium-sized mixing bowl, combine the 250 grams of quark with 2 tablespoons of freshly squeezed lemon juice and 1 teaspoon of finely grated lemon zest. Stir these ingredients together thoroughly until the mixture is smooth and the flavors are well incorporated. The lemon juice and zest add a fresh, tangy brightness to the quark.
  9. In a separate chilled bowl, pour 200 ml of sweet cream (süße Sahne) and add 50 grams of powdered sugar. Using an electric mixer or a whisk, beat the cream and sugar together on high speed until stiff peaks form. This means when you lift the whisk, the cream holds its shape firmly without collapsing.
  10. Gently fold the whipped cream into the quark mixture. To do this, add the whipped cream gradually to the quark and use a spatula to carefully combine them with slow, folding motions. This keeps the mixture light and airy while blending the flavors uniformly.
  11. Spoon the creamy quark and whipped cream mixture evenly over the layered fruits in the glass bowl. Use the back of the spoon or a spatula to smooth the surface, creating an even top layer that seals in the fruit flavors.
  12. Sprinkle 65 grams of chopped walnuts generously over the creamy top layer. The walnuts add a pleasant crunch and nutty flavor that complements the sweet and tangy fruits and creamy topping.
  13. Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let the fruit layer salad chill for at least 1 to 2 hours before serving. This chilling time allows the flavors to meld together and the cream layer to firm up slightly, enhancing the overall texture and taste.
  14. When ready to serve, remove the salad from the refrigerator. Use a large spoon to scoop out portions, making sure to get a bit of each fruit layer and the creamy topping in every serving for the perfect balance of flavors and textures.

Notes

For best results, use fresh, ripe fruits to maximize flavor and sweetness. If desired, you can substitute the quark with Greek yogurt for a slightly different texture and taste.
