  • 200 g Mandel(n), ungeschält
  • 200 g Zucker
  • 100 ml Wasser
  • 2 Pck. Vanillezucker
  • 1 EL Zimt

Instructions

  1. Prepare a non-stick pan and pour in 100 ml of water. Add 200 g of sugar, 2 packets of vanilla sugar, and 1 tablespoon of cinnamon to the water. Place the pan on high heat and bring the mixture to a rolling boil, stirring occasionally to dissolve the sugar completely.
  2. Once the sugar mixture is boiling, carefully add 200 g of unpeeled almonds to the pan. Continue cooking on high heat while stirring constantly to ensure the almonds are evenly coated and do not stick to the pan.
  3. Keep cooking and stirring the almonds until the sugar water evaporates and the sugar dries out, which will cause a grainy, sandy texture to appear around the almonds. This step requires continuous stirring to prevent burning and to evenly coat the almonds.
  4. After the sugar has dried, reduce the heat to medium. Continue to stir the almonds as the sugar begins to melt again. During this phase, the sugar caramelizes and forms a shiny, crispy coating around each almond. Stir carefully to prevent the sugar from burning and to ensure even caramelization.
  5. Once the almonds are evenly coated and caramelized, quickly transfer them onto a baking tray lined with parchment paper. Spread the almonds immediately and separate them individually using a spatula or fork, so they do not stick together as they cool down and harden.
  6. Allow the gebrannte Mandeln to cool completely at room temperature. Once cooled, they will have a crunchy, sweet cinnamon-vanilla coating reminiscent of traditional German Christmas markets.

Notes

This recipe works best using a non-stick pan to prevent the sugar from sticking and burning. Avoid experimenting with additional ingredients like cocoa powder or Amaretto, as these variations tend not to yield the desired crispy caramelized texture. For best results, stir constantly during cooking to ensure even coating and prevent burning.
