  • 2 Möhren
  • 1 Zucchini
  • 1 Zwiebel
  • 1 Ei
  • 100 g Mozzarella
  • 34 EL Mehl
  • Salz
  • Pfeffer
  • Öl

Instructions

  1. Begin by thoroughly washing the paprikaschoten (bell peppers), möhren (carrots), and zucchini under running water to remove any dirt or impurities. Peel the carrots and the onion. Cut off the ends of the zucchini and remove the seeds and stems from the bell peppers.
  2. Using a box grater or a food processor with a grating attachment, finely grate the bell peppers, carrots, zucchini, and onion. Place the grated vegetables into a large mixing bowl.
  3. Crack the egg into the bowl with the grated vegetables. Add a generous pinch of salt and freshly ground black pepper to taste. Sprinkle in 3 to 4 tablespoons of flour, starting with 3 tablespoons and adding more if needed to achieve a mixture that holds together and is not too wet.
  4. Using clean hands or a sturdy spoon, thoroughly mix all the ingredients together until a cohesive, thick vegetable mixture forms. If the mixture seems too loose or watery, add a little more flour until the consistency is firm enough to shape into patties.
  5. Let the vegetable mixture rest for about 5 to 10 minutes. This allows the flour to absorb excess moisture and makes the mixture easier to handle.
  6. While the mixture is resting, cut the mozzarella into small cubes, about 1 to 2 centimeters in size. Set the cubes aside.
  7. Heat a generous amount of oil in a large non-stick frying pan over medium heat. You will need enough oil to cover the bottom of the pan.
  8. With slightly damp hands, scoop a portion of the vegetable mixture and flatten it in your palm. Place a cube or two of mozzarella in the center, then shape the mixture around the cheese to form a round patty, ensuring the mozzarella is completely enclosed. Repeat with the remaining mixture.
  9. Once the oil is hot (but not smoking), carefully place the formed frikadellen (patties) in the pan. Cook them in batches if necessary, making sure not to overcrowd the pan.
  10. Fry the patties over medium heat for about 4 to 5 minutes on each side, turning them multiple times to ensure even browning and that the cheese melts inside. The frikadellen should be golden brown and crisp on the outside.
  11. When cooked, transfer the Gemüsefrikadellen to a plate lined with paper towels to absorb any excess oil. Serve them hot, ideally with your choice of side such as sesame potatoes and herbed quark.

Notes

For extra flavor, you can add fresh herbs like parsley or chives to the vegetable mixture. Make sure the mozzarella is well enclosed in the patties to prevent the cheese from leaking out during frying. You can also bake the frikadellen in the oven at 200°C (392°F) for a lighter version. Serve with your favorite dip or a fresh salad for a complete meal.
