Instructions

  1. Begin by preparing the Weißkohl (white cabbage). Remove any outer leaves that may be wilted or damaged to ensure freshness. Then cut the cabbage into quarters (achteln). Carefully remove the tough core (Strunk) from each quarter. After removing the core, finely slice the cabbage quarters into thin strips. This will help the cabbage cook evenly and absorb flavors better.
  2. Next, take a large frying pan or skillet and heat 2 tablespoons of oil over medium heat. Once the oil is hot but not smoking, add the finely sliced cabbage to the pan. Immediately pour in 1/2 cup of water to help create steam and aid in the cooking process. Cover the pan with a lid to trap the steam and allow the cabbage to soften and cook through.
  3. Let the cabbage simmer gently for approximately 30 minutes. During this time, stir the cabbage occasionally to prevent it from sticking to the pan and to ensure even cooking. The cabbage should become tender and slightly translucent but still hold some texture. About 5 minutes before the cooking time is complete, remove the lid and add 1 tablespoon of soy sauce to the cabbage. Stir well to distribute the soy sauce evenly. Continue cooking uncovered to allow the soy sauce to reduce slightly and intensify the flavor, creating a savory glaze on the cabbage. Once the liquid has reduced and the flavors are well combined, remove the pan from heat and serve.

Notes

For a richer flavor, you can add finely chopped garlic or onions at the beginning when heating the oil. Adjust the soy sauce to taste depending on how salty or savory you prefer the dish. This dish pairs wonderfully with boiled potatoes or as a side to meat dishes.
