- 1 large banana
- 120 g rolled oats (zarte Haferflocken)
- 1 handful dried prunes (Backpflaumen)
- 1 vanilla bean
- 1 handful mixed nuts (such as walnuts, cashews, and almonds)
- A splash of freshly squeezed orange juice (optional)
Instructions
- Preheat your oven to 180–200°C (356–392°F) using top and bottom heat. Line a baking tray with parchment paper and set aside.
- Peel the banana and place it in a large mixing bowl. Use a fork to thoroughly mash the banana until it forms a smooth, lump-free puree.
- Take the dried prunes and chop them into small, evenly sized pieces. Add the chopped prunes to the bowl with the mashed banana.
- Slice the vanilla bean lengthwise and use the back of a knife to scrape out the seeds (vanilla pulp). Add the vanilla seeds to the bowl.
- Roughly chop the mixed nuts (such as walnuts, cashews, and almonds) into small pieces. Add the chopped nuts to the mixing bowl.
- Pour in the rolled oats. If you like, add a splash of freshly squeezed orange juice to the mixture for extra flavor and moisture.
- Using clean hands, thoroughly mix all the ingredients together until you have a uniform, sticky dough. Make sure the oats, fruit, and nuts are evenly distributed throughout the mixture.
- With your hands, take small portions of the dough (about the size of a walnut) and roll them into balls. Place each ball onto the prepared baking tray.
- Once all the dough has been shaped into balls, gently press each one down with your fingers or the back of a spoon to form small, flat cookies. Leave a little space between each cookie, as they will not spread much during baking.
- Place the tray in the preheated oven and bake the cookies for about 15 minutes, or until they are golden brown on the edges and firm to the touch.
- Remove the cookies from the oven and let them cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
- Optional for extra crispiness: After the initial baking time, you can brush a little sugar beet syrup or honey onto half the cookies. Return them to the still-warm, turned-off oven and let them sit for a while to become crispier. This step is optional and depends on your taste preference.
Notes
This recipe yields approximately 16 cookies. You can customize the mix of nuts or even add other dried fruits for variety. The cookies are naturally sweetened with banana and prunes, making them a healthy snack option. For a vegan version, avoid using honey if you choose to glaze the cookies. The orange juice adds a refreshing note but can be omitted if preferred.
