Description
Saftige Hackfleischnester mit knuspriger Kruste, gefüllt mit cremigem Käse, goldbraun gebacken. Zartes Fleisch, würzige Zwiebeln, feine Knoblauchnoten und eine herrlich schmelzende Füllung verführen alle Sinne.
Ingredients
- 1 kg Hackfleisch (ground meat, e.g., beef or mixed)
- 1 large onion
- 100 ml milk (for soaking bread rolls)
- 100 g Brötchen (bread rolls)
- 1–2 cloves garlic
- Salt and spices to taste
- 200 g sour cream
- 2 eggs
- 200 g grated cheese
- Dill or other herbs to taste
Instructions
- Begin by preparing the bread for the meat mixture. Cut the bread rolls (Brötchen) into small pieces and place them in a bowl. Pour the milk over the bread pieces and let them soak for about 5-10 minutes until the bread is soft and has absorbed the milk.
- While the bread is soaking, peel and finely dice the large onion. Also, peel and press or finely chop the garlic cloves.
- In a large mixing bowl, combine the ground meat, the soaked and squeezed bread (discard any excess milk), diced onion, pressed garlic, and salt and spices of your choice (such as pepper, paprika, or ground cumin). Mix everything thoroughly with your hands or a spoon until all ingredients are well incorporated and the mixture is even.
- Preheat your oven to 200°C (392°F) top and bottom heat. Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- Take a portion of the meat mixture (about the size of a small orange) and shape it into a thick patty. Place the patty onto the prepared baking sheet. Using your fingers or the back of a spoon, press a deep well or indentation into the center of each patty to form a ’nest‘ for the filling. Repeat with the remaining meat mixture, spacing the nests evenly on the baking sheet.
- Prepare the cheese filling by combining the sour cream, eggs, grated cheese, and chopped dill or other fresh herbs in a separate bowl. Mix until the ingredients form a smooth, creamy mixture.
- Spoon a generous amount of the cheese filling into the well of each meat nest, filling them up but not overflowing.
- Once all nests are filled, place the baking sheet in the preheated oven. Bake the Hackfleisch-Nester for approximately 25 minutes, or until the meat is cooked through and the cheese filling is golden and set.
- Remove the baking sheet from the oven and let the nests cool for a few minutes before serving. Garnish with additional fresh herbs if desired. Serve hot, accompanied by a fresh salad, potatoes, or your favorite side dish.
Notes
You can use any type of ground meat for this recipe, such as beef, pork, or a mixture. Adjust the spices to your liking—paprika, ground cumin, or marjoram work particularly well. For the filling, feel free to experiment with different cheeses or add chopped vegetables for extra flavor and texture. The nests can also be prepared in advance and baked just before serving. Serve with a side of salad or roasted vegetables for a complete meal.
