- 1 kg Hackfleisch (mixed ground meat, such as beef or pork)
- 1 large onion
- 100 ml milk (for soaking bread)
- 100 g bread roll (Brötchen)
- 1–2 cloves garlic
- Salt, to taste
- Spices, to taste (e.g., pepper, paprika, marjoram)
- 200 g sour cream
- 2 eggs
- 200 g grated cheese (such as Gouda or Emmental)
- Fresh dill or other herbs, to taste
Instructions
- Prepare the bread by tearing or cutting the bread roll into small pieces and placing them in a bowl. Pour the milk over the bread and let it soak for about 10 minutes, or until the bread is soft and has absorbed the milk.
- While the bread is soaking, peel and finely dice the onion. Peel the garlic and press or finely chop it.
- In a large mixing bowl, combine the ground meat with the soaked bread (squeeze out any excess milk), diced onion, pressed or chopped garlic, salt, and your preferred spices such as pepper, paprika, or marjoram. Mix everything thoroughly with clean hands or a spoon until you have a uniform meat mixture.
- Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- Prepare the cheese filling by placing the sour cream, eggs, grated cheese, and chopped fresh dill or other herbs into a separate bowl. Mix all the filling ingredients together until well combined and smooth.
- With damp hands, take portions of the meat mixture and shape them into flat, round patties (about the size of the palm of your hand). Place each patty onto the prepared baking sheet, leaving some space between each.
- Using your thumb or the back of a spoon, press a deep indentation or well into the center of each meat patty to form a „nest“ for the filling, making sure not to press all the way through.
- Spoon a generous amount of the cheese filling into the indentation of each meat nest, filling them to the top but not overflowing.
- Place the baking sheet with the filled meat nests into the preheated oven. Bake at 200°C (392°F) for approximately 25 minutes, or until the meat is cooked through and the cheese filling is set and lightly golden on top.
- Once baked, remove the Hackfleisch-Nester from the oven. Allow them to rest for a few minutes before serving. Garnish with additional fresh herbs if desired, and serve hot with your favorite side dishes such as potatoes, salad, or vegetables.
Notes
You can customize the cheese filling by adding other herbs, spices, or even finely chopped vegetables for extra flavor. For a lighter version, use low-fat sour cream or substitute Greek yogurt. These meat nests are delicious served with a fresh salad or roasted potatoes. Be sure to let the bread soak thoroughly in the milk for the best texture.
