  • 1 kg Hackfleisch (ground meat)
  • 1 large onion
  • 100 ml milk (for soaking bread)
  • 100 g bread rolls (Brötchen)
  • 12 cloves garlic
  • Salt, to taste
  • Spices, to taste (e.g., pepper, paprika, or your preferred seasoning mix)
  • 200 g sour cream
  • 2 eggs
  • 200 g grated cheese
  • Dill or other fresh herbs, to taste

Instructions

  1. Preheat your oven to 200°C (392°F) and line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Start by preparing the bread. Tear the bread rolls into small pieces and place them in a bowl. Pour the milk over the bread and let it soak for about 5-10 minutes until the bread is soft and has absorbed the milk.
  3. While the bread is soaking, peel the onion and cut it into small cubes. Peel the garlic cloves and finely mince or press them.
  4. In a large mixing bowl, combine the ground meat, soaked bread (squeeze out excess milk if needed), diced onions, minced garlic, salt, and your choice of spices. Mix everything thoroughly with your hands or a wooden spoon until all ingredients are well incorporated and the mixture is uniform.
  5. Prepare the filling by combining the sour cream, eggs, grated cheese, and chopped dill or other herbs in a separate bowl. Mix well until the filling is creamy and the ingredients are evenly distributed.
  6. With damp hands, take handfuls of the meat mixture and form them into round patties (about the size of your palm). Place each patty on the prepared baking sheet, leaving some space between each one.
  7. Using your thumb or the back of a spoon, gently press a deep indentation into the center of each meat patty to create a ’nest‘ for the filling. Be careful not to press all the way through; the sides should be high enough to hold the filling.
  8. Spoon a generous amount of the cheese and herb filling into the center of each meat nest, filling the indentation completely.
  9. Place the baking sheet with the filled meat nests in the preheated oven. Bake for approximately 25 minutes, or until the meat is cooked through and the filling is set and golden on top.
  10. Once baked, remove the tray from the oven and allow the Hackfleisch-Nester to cool for a few minutes before serving. Garnish with extra fresh herbs if desired and serve hot, perhaps with a side salad or potatoes.

Notes

You can use any type of ground meat you prefer, such as beef, pork, or a mix. Adjust herbs and spices to your taste—parsley, chives, or even basil work well in the filling. For an extra touch, you can add a pinch of nutmeg or smoked paprika to the meat mixture. These nests are great for parties or family dinners and can be prepared ahead of time and baked just before serving.
