Instructions

  1. Begin by preparing all your ingredients. If your frozen raspberries are clumped together, gently separate them so they can be evenly layered. Set aside.
  2. Pour the cold cream into a large mixing bowl. Using an electric mixer or a whisk, beat the cream on high speed until it forms stiff peaks. This usually takes several minutes; you’ll know it’s ready when the cream holds its shape and does not slide off the whisk.
  3. Add the quark to the whipped cream. Using a spatula or a hand mixer on low speed, gently fold and mix the quark with the whipped cream until you have a smooth, homogeneous mixture. Take care not to deflate the whipped cream too much.
  4. Place the meringue (Baiser) on a clean surface or in a plastic bag. Crush or crumble the meringue into small pieces, about the size of coarse breadcrumbs or small nuts. You can do this with your hands or by lightly tapping with a rolling pin.
  5. Take a large, clear serving bowl or a deep trifle dish to assemble the dessert. Start by sprinkling a layer of crumbled meringue on the bottom of the bowl, creating an even base.
  6. Add a layer of frozen raspberries on top of the meringue, spreading them out evenly. The raspberries can be used straight from the freezer.
  7. Spoon a layer of the quark-cream mixture over the raspberries, smoothing it out with a spatula to cover the berries completely.
  8. Repeat the layering process—crushed meringue, frozen raspberries, and quark-cream—until all the ingredients are used up. Make sure to finish with a thick layer of the quark-cream mixture on top for a smooth and attractive finish.
  9. Cover the bowl with plastic wrap or a lid and refrigerate the dessert for at least 5 hours. This allows the flavors to meld together, the raspberries to thaw, and the meringue to soften slightly, creating a delicious texture.
  10. Just before serving, you can optionally decorate the top with a few extra raspberries or some crumbled meringue for a decorative touch. Serve chilled and enjoy!

Notes

For best results, allow the dessert to chill for at least 5 hours before serving. This allows the raspberries to thaw and the flavors to blend beautifully. You can assemble the dessert a day in advance and keep it refrigerated until needed. If you prefer a sweeter dessert, you can sprinkle a little sugar over the raspberries before layering.
