  • 800 g Quark, 20% Fettgehalt
  • 200 g Margarine
  • 5 Eier
  • 100 g Mehl
  • 200 g Zucker
  • ½ Packung Backpulver
  • 1 Packung Vanillezucker
  • etwas Zitronensaft

Instructions

  1. Begin by preheating your oven to 170°C (top and bottom heat). Lightly grease a springform cake pan with margarine or line it with baking paper to prevent the cake from sticking.
  2. In a large mixing bowl, add the Quark, margarine (softened at room temperature), eggs, flour, sugar, baking powder, vanilla sugar, and a splash of lemon juice. Ensure all ingredients are at room temperature for best results.
  3. Using a hand mixer or a stand mixer, mix all the ingredients together on medium speed until you have a smooth, lump-free batter. Scrape down the sides of the bowl as needed to make sure everything is well incorporated.
  4. If you wish to add fruit such as mandarin segments, cherries, or other fruits of your choice, gently fold them into the batter with a spatula at this stage. Be careful not to over-mix if adding fruit, so the pieces stay whole.
  5. Pour the finished batter evenly into the prepared cake pan, smoothing the surface with a spatula.
  6. Place the pan in the preheated oven on the middle rack. Bake the cake at 170°C for approximately 1 hour, or until the surface is golden and a toothpick inserted into the center comes out clean.
  7. Once the baking time is up, turn off the oven and leave the cake inside with the oven door slightly ajar. Allow the cake to cool gradually in the oven; this prevents the cake from collapsing or cracking due to sudden temperature changes.
  8. After the cake has cooled in the oven and is firm to the touch, remove it and let it cool completely at room temperature before removing it from the pan. Slice and serve plain, or with your favorite fruit or a dusting of powdered sugar.

Notes

For a fruity twist, you can fold in mandarin segments, cherries, or any other fruits of your choice into the batter before baking. Make sure any added fruit is well-drained to avoid excess moisture in the cake. Letting the cake cool slowly in the oven is crucial to prevent it from collapsing. This cheesecake is delicious on its own but can also be served with fresh fruit or a dollop of whipped cream.
