  • 800 g Quark, 20 % Fettgehalt
  • 200 g Margarine
  • 5 Eier
  • 100 g Mehl
  • 200 g Zucker
  • ½ Packung Backpulver
  • 1 Packung Vanillezucker
  • etwas Zitronensaft

Instructions

  1. Begin by preheating your oven to 170°C (340°F) with both top and bottom heat. Prepare a springform or round cake pan (about 26 cm in diameter) by greasing it thoroughly with margarine or butter to prevent sticking.
  2. In a large mixing bowl, add the quark, softened margarine, eggs, flour, sugar, baking powder, vanilla sugar, and a splash of lemon juice. Make sure the margarine is at room temperature for easier mixing.
  3. Using a hand mixer or stand mixer, blend all the ingredients together on medium speed until a smooth, homogeneous batter forms. Scrape down the sides of the bowl as needed to ensure all ingredients are well incorporated.
  4. If you wish to add fruit (such as drained mandarin segments, cherries, or other fruits of your choice), gently fold them into the batter at this stage using a spatula, ensuring even distribution throughout the mixture.
  5. Pour the finished batter into the prepared cake pan, spreading it evenly with a spatula or the back of a spoon. Smooth the surface to ensure an even bake.
  6. Place the cake pan in the preheated oven on the middle rack. Bake the cheesecake at 170°C (340°F) for approximately 1 hour. The cake should be lightly golden on top and set in the center.
  7. After the baking time is up, turn off the oven but do not remove the cake immediately. Leave the cheesecake in the oven with the door slightly ajar for at least 30 minutes to cool gradually. This helps prevent the cake from collapsing and ensures a creamy texture.
  8. Once the cake has cooled in the oven, take it out and let it come to room temperature. Carefully run a knife around the edge of the cake to loosen it from the pan, then remove the springform ring.
  9. Transfer the cheesecake to a serving plate. Optionally, dust with powdered sugar or decorate with fresh fruit before serving. Slice and enjoy!

For extra flavor and texture, you can fold in canned mandarin oranges, cherries, or other fruits of your choice into the batter before baking.
