Luftig-cremiger Käsekuchen ohne Boden: goldgelbe Oberfläche, zartschmelzende Textur, fein-säuerlicher Quarkgeschmack, dezent vanillig, mit einem Hauch Zitrone – schnell gerührt, unwiderstehlich saftig.

  • 4 Eier
  • 80g Mehl
  • 200g Margarine
  • 200g Zucker
  • 1/2 Päckchen Backpulver
  • 2 Päckchen Vanillezucker
  • etwas Zitronensaft
  • 2 Dosen Mandarinen

Instructions

  1. Preheat your oven to 170°C (338°F) with both top and bottom heat (Ober-/Unterhitze). Prepare a 24 cm springform pan by lining the bottom and sides with baking paper to prevent sticking and to allow for easy removal after baking.
  2. In a large mixing bowl, add the quark, eggs, flour, margarine, sugar, baking powder, vanilla sugar, and a splash of lemon juice. Using a hand mixer or stand mixer, blend all ingredients together on medium speed until you achieve a smooth, lump-free batter. Scrape down the sides of the bowl as needed to ensure all ingredients are fully incorporated.
  3. Drain the mandarin oranges thoroughly to remove excess juice. Gently fold most of the drained mandarin segments into the batter, reserving a few segments for decoration if desired. Mix carefully to avoid breaking up the fruit too much.
  4. Pour the batter evenly into the prepared springform pan. Smooth the top with a spatula. If you reserved any mandarin segments, arrange them on top of the batter for an attractive finish.
  5. Place the pan in the preheated oven and bake at 170°C (338°F) for about 1 hour. The cake should be set and lightly golden on top. To check for doneness, insert a toothpick into the center; it should come out clean or with just a few moist crumbs attached.
  6. Once baked, turn off the oven and leave the cake inside with the door slightly ajar. Allow the cheesecake to cool slowly in the warm oven. This gradual cooling process helps prevent the cake from collapsing or cracking.
  7. After the cake has cooled to room temperature in the oven, remove it and let it cool completely in the pan. Once cool, carefully release the springform pan and transfer the cake to a serving plate.
  8. Slice and serve the cheesecake plain or with additional fruit on top. Enjoy this quick and delicious cake with a cup of coffee or tea.

Notes

You can substitute the mandarins with other canned fruits like cherries or pineapple if desired. For a lighter cake, you can use low-fat quark. Make sure to thoroughly drain the fruit to prevent excess moisture in the cake. The cake is best when fully cooled, as this helps it set properly and enhances the flavor. For extra flavor, sprinkle some powdered sugar over the cooled cake before serving.
