  • 1 Zwiebel
  • 150 g Speck
  • 300 ml Sahne
  • 80 g Parmesan
  • 1 Ei
  • Salz
  • Pfeffer
  • Petersilie, gehackt

Instructions

  1. Begin by thoroughly washing 1 kilogram of potatoes under running water to remove any dirt or debris. Then, place the potatoes in a pot filled with enough water to cover them and bring to a boil. Cook the potatoes until they are half done—this means they should be tender but still firm enough to hold their shape when sliced. This usually takes about 10-15 minutes depending on the size of the potatoes. Once half cooked, drain the water and let the potatoes cool slightly. After cooling, peel the potatoes carefully and slice them evenly into medium-thick rounds. Set these potato slices aside.
  2. Next, prepare the creamy sauce that will give the dish its rich flavor. In a mixing bowl, combine 300 milliliters of heavy cream with 1 egg and 80 grams of grated Parmesan cheese. Whisk these ingredients together until the mixture is smooth and well combined. Season this cream mixture with salt and freshly ground black pepper to taste, ensuring the flavors are balanced. Set this sauce aside for later use.
  3. Take 150 grams of bacon (Speck) and 1 onion, then finely dice both into small pieces. Reserve about two tablespoons of the diced bacon separately; these will be used later to garnish the potatoes just before serving. The remaining bacon and onion will be cooked together in the next step.
  4. Heat a frying pan over medium heat and add a generous amount of butter to melt. Once the butter is melted and begins to bubble, add the finely diced onion and sauté it gently. Cook the onion until it becomes translucent and fragrant, which usually takes about 3-4 minutes. Then, add the remaining diced bacon to the pan and fry it together with the onion until the bacon is crispy and golden brown. Stir occasionally to ensure even cooking without burning. Once done, remove the pan from heat.
  5. Preheat your oven to 200 degrees Celsius (approximately 390 degrees Fahrenheit). While the oven is heating, take a suitable baking dish or casserole and grease it thoroughly with butter to prevent sticking. Arrange the sliced potatoes evenly in the dish in a single layer. Carefully pour the prepared cream sauce with egg and Parmesan over the potatoes, making sure it covers them evenly. Then, spread the cooked onion and bacon mixture evenly on top of the potatoes and sauce.
  6. Place the baking dish into the preheated oven and bake the potatoes at 200 degrees Celsius for about 15 minutes. This initial baking allows the sauce to start setting and the top to brown slightly. After 15 minutes, reduce the oven temperature to a slightly lower heat (around 180 degrees Celsius or 350 degrees Fahrenheit) to allow the dish to finish cooking gently without burning. Bake for an additional 10-15 minutes or until the sauce is bubbly and the potatoes are fully tender.
  7. Just before the baking time is complete, remove the dish from the oven. Sprinkle the reserved two tablespoons of bacon pieces, some extra grated Parmesan cheese, and a generous amount of freshly chopped parsley over the top. Return the dish to the oven for about 5 more minutes or until the cheese melts and the bacon crisps slightly. This final garnish adds texture and a burst of flavor. Notes
