- 200 g Tilsiter or mountain cheese, diced
- 1 egg for brushing
- 1 package puff pastry
- Salt, pepper, and nutmeg to taste
- 200 g smoked ham
- 1 bread roll (stale), diced
- 2–3 eggs
- 1 red bell pepper, diced
- 1 onion, finely diced
- 1 green bell pepper, diced
- 800 g ground meat
Instructions
- Preheat your oven to 210°C (410°F) so it is ready for baking once you have assembled the loaf.
- Prepare your ingredients by dicing the Tilsiter or mountain cheese, smoked ham, red and green bell peppers, onion, and the stale bread roll. Set aside 1 egg, which you will need later for brushing the pastry.
- In a large mixing bowl, combine the ground meat, smoked ham, stale bread roll cubes, 2–3 eggs, finely diced onion, and season generously with salt, pepper, and a pinch of nutmeg. Mix everything thoroughly with clean hands or a sturdy spoon until the ingredients are well incorporated and the mixture is homogeneous.
- Add the diced red and green bell peppers and the diced cheese to the meat mixture. Mix again until the peppers and cheese are evenly distributed throughout the mixture.
- Lightly flour your work surface and roll out the puff pastry into a rectangle large enough to wrap around the meat loaf. If using ready-rolled dough, unroll it and lay it flat.
- Shape the meat mixture into an even oval loaf, making sure it is compact and holds together well.
- Place the meat loaf in the center of the rolled-out puff pastry. Carefully wrap the pastry around the meat loaf, sealing the edges thoroughly so that the filling is completely enclosed. If desired, trim excess pastry and use it to cut out decorative shapes (such as leaves or braids) to adorn the top of the loaf.
- Transfer the wrapped loaf, seam side down, onto a baking tray lined with parchment paper. Beat the reserved egg and brush it evenly over the surface of the pastry. Add your decorative pastry shapes on top and brush them with egg as well for a glossy finish.
- Place the tray in the preheated oven and bake the cheese and meat loaf in puff pastry at 210°C (410°F) for about 1 hour. The pastry should turn golden brown, and the loaf should be cooked through.
- Once baked, remove the tray from the oven and allow the loaf to rest for a few minutes before slicing. Serve warm, garnished with fresh herbs or a simple salad if desired.
Notes
Ensure the meat mixture is well combined and compact to prevent the loaf from breaking apart during baking. Do not soak the bread roll, as the eggs provide enough moisture for the mixture. You can use your favorite cheese or a cheese blend for extra flavor. If you like a crispier crust, bake on a preheated baking stone or directly on the oven rack with a tray underneath to catch any drips.
