Ingredients
- 800 g Quark, 20 % Fettgehalt
- 200 g Margarine
- 5 Eier
- 100 g Mehl
- 200 g Zucker
- ½ Packung Backpulver
- 1 Packung Vanillezucker
- etwas Zitronensaft
Instructions
- Preheat your oven to 170°C (338°F) using top and bottom heat. Lightly grease a springform cake pan (about 26 cm in diameter) with margarine or line it with parchment paper to prevent sticking.
- In a large mixing bowl, add the Quark, margarine (softened), eggs, sugar, vanilla sugar, and a splash of lemon juice. Mix the ingredients together using a hand mixer or stand mixer on medium speed until the mixture is smooth and well combined.
- Add the flour and baking powder to the bowl. Continue mixing until all ingredients are fully incorporated, and you have a creamy, lump-free batter. Scrape down the sides of the bowl with a spatula to ensure everything is evenly mixed.
- If you would like to add fruit (such as drained mandarin oranges, cherries, or other fruit of your choice), gently fold them into the batter at this stage using a spatula.
- Pour the batter evenly into the prepared cake pan and smooth the surface with a spatula or the back of a spoon to create an even layer.
- Place the cake pan in the preheated oven on the middle rack and bake for approximately 1 hour, or until the top is golden brown and the cake is set. You can test doneness by inserting a toothpick in the center; it should come out clean or with just a few moist crumbs.
- Once the cake is done baking, turn off the oven and leave the cake inside with the oven door slightly ajar. Allow the cake to cool gradually for at least 30–60 minutes in the oven. This prevents the cake from collapsing or cracking due to a sudden temperature change.
- After the cake has cooled in the oven, remove it and let it cool completely at room temperature before carefully removing it from the pan. Serve and enjoy!

You can customize this cheesecake by adding different fruits, such as mandarin oranges, cherries, or berries, directly into the batter before baking. Be sure to drain any canned fruit thoroughly to avoid excess moisture. For a richer flavor, you can substitute part of the margarine with butter. Letting the cake cool slowly in the oven is important to prevent it from sinking in the middle. This cake is perfect for making ahead and tastes great served chilled. Dust with powdered sugar before serving if desired.
