  • 500 g Mehl
  • 3 Eier
  • 220 ml Milch
  • 220 ml Öl
  • 1 Packung Backpulver
  • 300 g Speisequark
  • 1 Ei
  • Puderzucker nach Bedarf
  • Süßkirschen

Instructions

  1. Preheat your oven to 190°C (374°F) and line a baking sheet with parchment paper to prevent sticking.
  2. In a large mixing bowl, combine the eggs and sugar. Using an electric mixer or a whisk, beat the mixture until it becomes light and fluffy, and the sugar is mostly dissolved.
  3. Gradually add the milk and oil to the egg-sugar mixture while continuing to mix. Add these liquids in portions to ensure they are well incorporated and the batter remains smooth.
  4. In a separate bowl, mix the flour and baking powder. Gradually sift this dry mixture into the wet ingredients, stirring constantly, until you have a smooth, lump-free batter.
  5. Pour the finished batter onto the prepared baking sheet. Use a spatula to spread the batter evenly over the entire surface for uniform baking.
  6. Wash the sweet cherries, remove the pits, and gently pat them dry with a paper towel. Evenly distribute the pitted cherries over the surface of the batter.
  7. In another bowl, combine the quark with one egg. Mix thoroughly until the mixture is smooth and homogenous. Taste and sweeten with powdered sugar as desired, mixing well to incorporate.
  8. Using a spoon, place small dollops of the quark mixture between the cherries on top of the batter. Distribute these evenly for a balanced flavor and texture in every slice.
  9. Place the baking sheet in the preheated oven and bake the cake at 190°C (374°F) for approximately 25 minutes, or until the cake is golden, the quark filling is set, and a toothpick inserted into the cake comes out clean.
  10. Remove the cake from the oven and let it cool slightly on the baking sheet. Cut into squares or slices, dust with additional powdered sugar if desired, and serve warm or at room temperature.

Notes

You can use fresh or canned sweet cherries for this recipe. If using canned cherries, make sure to drain them well before placing on the batter. Adjust the amount of powdered sugar in the quark filling according to your preferred sweetness. This cake tastes delicious both warm and cold, and pairs perfectly with a cup of coffee or tea.
