- 1 Packung Backpulver
- 3 Eier
- etwas Salz
- 150 g Mehl
- 150 g Speisestärke
- 250 g Butter
- 150 g Zucker
- 2 Packung Vanillezucker
- 140 g gemahlene Mandeln
- Fett für die Form
- Puderzucker
Instructions
- Begin by preparing all your ingredients. Allow the butter to soften slightly, then melt it gently in the microwave until just liquid. Let it cool to room temperature so it is soft but not hot.
- In a large mixing bowl, combine the sugar and vanilla sugar, mixing until evenly distributed. Add the cooled, melted butter to the sugar mixture.
- Using an electric mixer or hand whisk, beat the butter and sugar mixture until it becomes light and creamy, about 2-3 minutes.
- Add the eggs one at a time to the butter-sugar mixture. After adding each egg, mix for about 1.5 minutes until fully incorporated before adding the next egg. This will help create a fluffy and stable batter.
- In a separate bowl, whisk together the cornstarch (Speisestärke), baking powder, flour, and a pinch of salt to ensure even distribution of the dry ingredients.
- Gradually add the dry ingredients to the wet mixture by spoonfuls, mixing continuously on low speed. This helps prevent lumps and ensures a smooth batter.
- Pour in the Amaretto and continue mixing until it is fully combined and the batter is smooth and homogeneous.
- Fold in the ground almonds gently using a spatula or wooden spoon, ensuring they are evenly distributed throughout the batter.
- Prepare a 26-28 cm springform pan by thoroughly greasing it with butter or oil and lining the bottom with parchment paper to prevent sticking.
- Pour the finished batter into the prepared pan, spreading it evenly with a spatula. If desired, you can sprinkle additional sliced almonds on top for extra texture and decoration.
- Place the pan in a preheated oven at 160°C (fan/air circulation) or 160°C (convection), and bake for approximately 1 hour, or until a toothpick inserted in the center comes out clean and the top is golden brown.
- Once the cake is done baking, remove it from the oven and allow it to cool in the pan for about 10 minutes. Then carefully remove the sides of the springform pan and invert the cake onto a wire rack.
- While the cake is still warm, generously dust the top with powdered sugar. Allow the cake to cool completely before slicing and serving.
Notes
For an extra almond flavor, you can add a few drops of bitter almond extract to the batter. The cake tastes especially delicious if served slightly warm with a cup of coffee or tea. Be sure to use good-quality Amaretto for the best flavor. If you like, you can add some sliced almonds on top for a beautiful finish.
