- 1 kg apricots

Instructions
- Preheat your oven to 180°C (356°F) using top and bottom heat. Prepare a baking sheet by lining it with parchment paper to prevent sticking and ensure easy removal of the cake after baking.
- Wash the apricots thoroughly under running water to remove any dirt or residue. Cut each apricot in half, remove the pit, and then slice the fruit into small bite-sized pieces. Set the prepared apricots aside.
- In a large mixing bowl, combine the eggs, granulated sugar, and vanilla sugar. Using an electric mixer or a whisk, beat the mixture on high speed for several minutes until it becomes very light, pale, and fluffy. This step helps to incorporate air, resulting in a lighter cake.
- Add the sour cream and oil to the egg mixture. Mix gently until both ingredients are fully incorporated, creating a smooth and creamy batter.
- In a separate bowl, sift together the flour and baking powder to ensure even distribution. Gradually add the sifted dry ingredients to the wet mixture, stirring gently with a spatula or mixer on low speed until you have a smooth, lump-free batter. Be careful not to overmix.
- Gently fold the prepared apricot pieces into the batter using a spatula, making sure they are evenly distributed throughout the mixture but being careful not to crush them.
- Pour the batter onto the prepared baking sheet. Use a spatula to spread the mixture evenly across the entire surface of the sheet, ensuring a uniform thickness for even baking.
- Place the baking sheet in the preheated oven and bake for approximately 30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and allow it to cool on the baking sheet for at least 15–20 minutes. Once cooled, you can transfer the cake to a wire rack if desired.
- Before serving, dust the cooled cake generously with powdered sugar. Slice into squares and enjoy!
Notes
For best results, use ripe but firm apricots to avoid excess moisture in the cake. You can also substitute apricots with other stone fruits such as plums or peaches. Serve the cake slightly warm with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat. Store leftovers in an airtight container at room temperature for up to 2 days.
