- 300 g Marillen (apricots)
- 2 EL Zucker (2 tablespoons sugar)
- 0.5 Becher Schlagobers (half a cup heavy cream/whipping cream)
- 100 ml Milch (100 ml milk)
Instructions
- Begin by selecting very ripe apricots, as these will provide the best flavor and natural sweetness for your ice cream. Wash the apricots thoroughly to remove any dirt or residue. Cut the apricots in half and remove the pits, discarding them.
- Place the prepared apricot halves into a blender or food processor. Add the sugar and milk to the blender as well. Blend everything together until you achieve a completely smooth and creamy apricot puree. Scrape down the sides as needed to ensure all fruit is evenly processed.
- In a separate mixing bowl, pour in the heavy cream (Schlagobers). Using a hand mixer or a whisk, whip the cream until it forms stiff peaks. This step is important to create a light and airy texture in the finished ice cream.
- Carefully fold the whipped cream into the apricot puree. Use a spatula and gentle folding motions to combine the mixtures, making sure not to deflate the whipped cream. Continue folding until the mixture is well combined and uniform in texture.
- Transfer the finished mixture into a freezer-safe container. Smooth the top with the spatula and cover the container with a lid or plastic wrap to prevent ice crystals from forming.
- Place the container in the freezer and allow the ice cream to freeze for at least 4-6 hours, or until it is firm. For best results, stir the mixture every hour for the first 2-3 hours to ensure a creamier texture and to prevent large ice crystals from forming.
- Once the Marilleneis is fully frozen, remove it from the freezer about 10 minutes before serving to allow it to soften slightly. Scoop into bowls or cones and enjoy your homemade apricot ice cream.
Notes
For an adult twist, you can mix in a splash of apricot liqueur or schnapps before freezing the mixture. This adds a subtle flavor and helps create a softer texture. You can also experiment by adding a squeeze of lemon juice to brighten the flavor. If you do not have Schlagobers, use another full-fat whipping cream.
