  • 350 g Zucker
  • 1 Liter Wasser

Instructions

  1. Begin by thoroughly washing the Marillen (apricots) under cold running water to remove any dirt or residue. Once clean, cut each apricot in half and remove the pit. Set the halved, pitted apricots aside.
  2. Sterilize your preserving jars and lids by washing them in hot, soapy water and then rinsing them well. Place the halved apricots into the clean jars, filling them up to just below the rim. Arrange the apricots with the cut side facing downward for a neat presentation.
  3. Preheat your oven to 90 degrees Celsius (194 degrees Fahrenheit) to prepare for the canning process.
  4. In a large saucepan, combine 1 liter of water with 350 grams of sugar. Bring the mixture to a gentle boil over medium heat, stirring frequently until the sugar is completely dissolved and you have a clear sugar syrup.
  5. Carefully pour the hot sugar syrup over the apricots in the jars, making sure all the fruit is covered. Leave about 1 cm (about 1/2 inch) of space at the top of each jar to allow for expansion during processing.
  6. Wipe the rims of the jars with a clean, damp cloth to remove any syrup or fruit residue. Place the sterilized lids onto the jars and screw them on tightly, but not overly tight.
  7. Arrange the filled and sealed jars on a baking tray or in a deep roasting pan. Place the tray in the preheated oven and process the jars at 90 degrees Celsius for 30 minutes to ensure the compote is properly preserved.
  8. After 30 minutes, carefully remove the jars from the oven using oven mitts or a jar lifter. Allow the jars to cool completely at room temperature. As they cool, you should hear the lids ‚pop‘ as they seal.
  9. Once cooled, check that each jar is properly sealed by pressing down on the center of the lid. If it does not flex, the jar is sealed. Store the sealed jars in a cool, dark place until ready to use.

Store the Marillenkompott in a cool, dark place to preserve its flavor and freshness. Once opened, keep the compote refrigerated and consume within a few days.
