  • 1/2 packet desiccated coconut
  • Optional: canned mandarin oranges

Instructions

  1. In a medium-sized mixing bowl, combine the mascarpone, vanilla sugar, sifted powdered sugar, and a small splash of lemon juice. Use a hand mixer or whisk to blend the ingredients together until the mixture is smooth and creamy.
  2. Transfer the mascarpone cream mixture into a piping bag fitted with a medium-sized round tip. If you do not have a piping bag, you can use a sturdy plastic bag with the corner snipped off.
  3. Take one ladyfinger and lay it with the sugar-coated side facing up. Pipe a generous line of the mascarpone mixture down the length of the sugar side. Place a second ladyfinger on top, sugar side out, pressing gently to sandwich the filling and stick the two together. Repeat this process until all the ladyfingers and filling are used, forming sandwich sticks.
  4. Pour the heavy cream into a shallow dish. Working one at a time, quickly dip each filled ladyfinger stick briefly into the cream, ensuring it is moistened but not soggy. Immediately roll the dipped stick in desiccated coconut, turning to coat all sides evenly.
  5. If desired, before sandwiching the ladyfingers, place a few pieces of well-drained canned mandarin orange between the layers for a fruity twist.
  6. Arrange the finished mascarpone sticks in a single layer on a tray or plate. Cover the tray with plastic wrap or place in an airtight container.
  7. Refrigerate the mascarpone sticks overnight or for at least 6 hours. This resting period allows the flavors to meld and the ladyfingers to soften, resulting in a tender, creamy texture.
  8. Once chilled and set, serve the mascarpone sticks cold as a delightful coffee snack or a sweet treat for any occasion. Enjoy!

Notes

For a lighter version, you can use light mascarpone and a reduced-fat cream substitute. Adding canned mandarin oranges between the ladyfingers gives a refreshing, fruity note to the dessert.
