Ingredients
- 2 Putenschnitzel
- 1 Zucchini
- 200 g Feta-Käse
- 1 Becher Schlagsahne
- 200 ml Milch
- 2 TL Basilikum, getrocknet
- 1 TL Thymian, getrocknet
- 1 TL Oregano, getrocknet
- Salz
- Pfeffer
Instructions
- Preheat your oven to 200°C (392°F) so it is ready for baking when you have assembled the dish.
- Rinse the zucchini thoroughly under cold water. Trim off both ends and cut it into small, even cubes, about 1 cm in size. Set the cubed zucchini aside.
- Pat the turkey schnitzels dry with paper towels. Lightly grease a large, ovenproof baking dish with a little oil or cooking spray to prevent sticking.
- Place the turkey schnitzels flat in the prepared baking dish, making sure they do not overlap. Season both sides of the schnitzels generously with salt and freshly ground black pepper.
- Evenly distribute the cubed zucchini over the turkey schnitzels in the baking dish, ensuring the zucchini is spread out and covers the meat.
- Take the feta cheese and crumble it with your hands or a fork into small pieces. Scatter the crumbled feta evenly over the zucchini and turkey schnitzels, making sure every area gets a bit of cheese.
- In a medium bowl, pour in the heavy cream (Schlagsahne) and add the milk. Add the dried basil, dried thyme, and dried oregano to the mixture. Whisk everything together thoroughly until the herbs are evenly distributed and the mixture is smooth.
- Slowly pour the cream and milk herb mixture evenly over the contents of the baking dish, ensuring all the schnitzels and vegetables are well covered.
- Place the baking dish uncovered in the preheated oven and bake for about 30 minutes. The exact time may vary depending on the thickness of your turkey schnitzels, so check that the turkey is cooked through—the meat should be white and no longer pink in the center, and the sauce should be bubbling.
- Once cooked, remove the baking dish from the oven. Allow the dish to rest for about 5 minutes before serving so the sauce can thicken slightly. Serve the Mediterranean turkey schnitzels with zucchini and feta directly from the baking dish, spooning plenty of sauce and vegetables over each portion. Enjoy!
Notes
For an even more flavorful dish, you can add some chopped garlic or a handful of cherry tomatoes to the baking dish before baking. This recipe pairs well with rice, couscous, or fresh bread to soak up the delicious Mediterranean sauce. If you prefer a lighter version, you can substitute part of the cream with more milk or use light cream. Be sure not to overbake the turkey, as it can become dry—cover with foil if needed for the last 10 minutes if the top is browning too quickly.
