Herzhaftes Nudel-Hack-Salat mit zartem Rinderhack, würzigem Kreuzkümmel, frischen Tomaten und cremigem Joghurt. Knackige Zwiebeln, aromatischer Knoblauch und Petersilie verleihen Frische und intensive Textur.

  • 500 g Nudeln
  • 1 große Zwiebel
  • 400 g Rinderhack
  • 1 TL Kreuzkümmel
  • 4 große Tomaten
  • 1 Handvoll Petersilie
  • 4 Knoblauchzehen
  • 500 g Joghurt
  • 2 EL Butter
  • 1 TL Paprikapulver edelsüß

Instructions

  1. Bring a large pot of salted water to a boil. Add 500 g of noodles and cook them according to the package instructions until they are al dente, meaning they should be cooked through but still firm to the bite. Once cooked, drain the noodles thoroughly and set them aside.
  2. Peel one large onion and finely chop it into small pieces. Heat a large frying pan over medium heat. Add the chopped onion, 400 g of ground beef (Rinderhack), and 1 teaspoon of cumin (Kreuzkümmel) to the pan. Fry and stir the mixture for about 5 minutes until the onion becomes translucent and the meat starts to brown evenly.
  3. While the meat and onion are cooking, wash 4 large tomatoes thoroughly. Remove the stems and finely dice half of the tomatoes. Also wash a handful of fresh parsley and chop it finely.
  4. Add the diced half of the tomatoes to the frying pan with the meat and onions. Continue cooking the mixture for another 5 minutes, allowing the tomatoes to soften and blend with the meat. Remove the pan from heat and season the meat mixture with salt and pepper to taste.
  5. In a separate bowl, mix the remaining half of the diced tomatoes with the chopped parsley. Season this fresh tomato and parsley mixture with salt and pepper, then set it aside to be used as a fresh topping later.
  6. Peel 4 cloves of garlic and finely mince them. Combine the minced garlic with 500 g of yogurt in a bowl. Add a pinch of salt to the yogurt mixture and stir until well blended, creating a flavorful garlic yogurt sauce.
  7. In a small frying pan, melt 2 tablespoons of butter over medium heat. Once melted and hot, add 1 teaspoon of sweet paprika powder (Paprikapulver edelsüß) to the butter and stir continuously for about 1 minute. This will toast the paprika and release its aroma without burning it.
  8. Now, combine the cooked noodles with the garlic yogurt sauce, mixing thoroughly so that the noodles are evenly coated with the creamy garlic flavor.
  9. To serve, arrange the garlic yogurt coated noodles on plates. Spoon the seasoned ground meat and tomato mixture over the noodles. Drizzle the paprika butter evenly on top, and finally add the fresh tomato and parsley salad mixture as a fresh, colorful garnish. Serve immediately and enjoy this hearty and flavorful Nudel-Hack-Salat.

Notes

For best results, use fresh, ripe tomatoes to enhance the flavor of the salad. You can adjust the seasoning of the meat and yogurt sauce according to your taste, adding more salt, pepper, or cumin if desired. This dish can be served warm or at room temperature and is ideal for a satisfying lunch or dinner. Leftovers can be stored in the refrigerator for up to two days.
