- 1 Packung Nudeln (Pasta of your choice, e.g., spiral or penne)
- 10 Eier
- 1 große Fleischwurst (large bologna sausage or similar cooked sausage)
- 1 große Zwiebel
- 1 Glas Gewürzgurken (jar of pickled gherkins)
- 2 Gläser Mayonnaise (Miracel Whip, dark blue version, or similar creamy mayo)
- 2–3 Esslöffel Senf (mustard)
- Pfeffer (pepper), nach Geschmack
- Fondor (seasoned salt or bouillon powder), nach Geschmack
- Paprikapulver (paprika powder), nach Geschmack
Instructions
- Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta in a colander and rinse it under cold water to cool it down and prevent it from sticking. Set the cooled pasta aside.
- While the pasta is cooking, place the eggs in a saucepan and cover them with cold water. Bring the water to a boil, then reduce the heat and simmer the eggs for about 10 minutes until hard-boiled. Once done, transfer the eggs to a bowl of cold water to stop the cooking process. When the eggs are cool, peel them and chop them into small pieces.
- While the eggs and pasta are cooling, dice the Fleischwurst (bologna sausage) into small, bite-sized cubes. Set aside.
- Peel and finely chop the large onion. Set aside.
- Remove several pickled gherkins from the jar (according to your taste) and slice them into small pieces. Reserve a generous amount of the pickle brine (about 2-3 tablespoons) for later use.
- In a large mixing bowl, add the two jars of mayonnaise. Pour in a good splash (about 2-3 tablespoons) of the gherkin brine to add tanginess to the dressing. Mix well to combine.
- Add the mustard (2-3 tablespoons), fresh ground pepper, Fondor (or seasoned salt/bouillon powder), and paprika powder to the mayonnaise mixture. Stir thoroughly until all the seasonings are evenly incorporated and the dressing is smooth and creamy.
- Add the finely chopped onion to the mayonnaise dressing and mix well.
- In a very large bowl, combine the diced Fleischwurst, chopped eggs, and sliced gherkins. Add half of the prepared mayonnaise dressing and stir everything together until well mixed.
- Next, add the cooled pasta gradually to the bowl with the sausage, eggs, and gherkins. Pour in the remaining mayonnaise dressing and gently mix until all ingredients are thoroughly coated and evenly distributed. Be careful not to break the pasta.
- Taste the salad and adjust the seasoning with additional pepper, Fondor, or paprika if desired.
- Cover the bowl with plastic wrap or a lid, and refrigerate the pasta salad for at least 1 hour to allow the flavors to meld. You can also prepare it a day in advance for even better flavor.
- Serve the Nudelsalat chilled as a snack, side dish, or light meal. Enjoy!
Notes
For the best flavor, let the salad rest in the refrigerator for several hours or overnight before serving. You can customize this recipe by adding peas, bell peppers, or corn if you like. If you can’t find Fleischwurst, substitute with another mild cooked sausage or even cooked ham. Miracel Whip gives the salad its characteristic tang, but regular mayonnaise works too. Adjust the amount of mustard, pickle brine, and seasonings to your taste.
