- 500 g Magerquark
- 100 g Zucker
- 2 Eier
- 40 g Speisestärke
- 1 kg Äpfel
- 1 Pck. Vanillezucker
- 1 EL Zitronensaft
Instructions
- Begin by preparing the streusel dough. In a large mixing bowl, combine 300 g of flour, 150 g of sugar, 1 packet of vanilla sugar, and a pinch of salt. Add 200 g of cold butter cut into small cubes. Use electric hand mixer with dough hooks to mix all ingredients together until a crumbly dough forms. If necessary, finish kneading the dough gently by hand until it holds together well and forms small crumbs (streusel).
- Grease a springform pan thoroughly with butter or another fat of your choice to prevent sticking. Take about two-thirds of the streusel dough and evenly press it into the bottom of the greased springform pan. Use your fingers or the back of a spoon to press down firmly to create a compact base layer for the cake.
- Prepare the filling by combining the filling ingredients. In a separate large bowl, whisk together 500 g of low-fat quark, 250 ml of cream, 100 g of sugar, 2 eggs, 40 g of cornstarch, 1 packet of vanilla sugar, and 1 tablespoon of lemon juice until the mixture is smooth and creamy without lumps.
- Peel the apples, core them, and slice them into thin wedges or slices. Gently fold the apple slices into the quark filling or simply arrange them on top after pouring the filling into the pan.
- Pour the smooth quark filling evenly over the streusel base in the springform pan. Arrange the prepared apple slices neatly on top of the quark filling, distributing them evenly to cover the surface.
- Take the remaining one-third of the streusel dough and sprinkle it generously over the apples and filling, covering the top completely with crumbly streusel pieces.
- Preheat your oven to 180 degrees Celsius (356 degrees Fahrenheit). Place the springform pan with the assembled cake into the oven and bake for approximately 50 to 60 minutes. The streusel topping should turn golden brown and the filling should be set but still slightly moist in the center.
- Once baked, remove the cake from the oven and allow it to cool completely in the springform pan for at least 30 minutes. This resting time helps the filling to firm up and makes it easier to slice the cake without it falling apart.
- After cooling, carefully remove the sides of the springform pan. Serve the Omas Quark Apfel Streusel Torte slightly warm or at room temperature, optionally dusted with powdered sugar for an elegant finish.
Notes
For best results, use tart and firm apples such as Granny Smith or Braeburn to balance the sweetness of the quark filling. The cake can be stored covered in the refrigerator for up to 3 days and tastes delicious even the next day when the flavors have melded together. If desired, serve with a dollop of whipped cream or vanilla sauce.
