- 1 Stange Lauch (leek)
- 1 Dose Tomaten, gewürfelt (1 can diced tomatoes, approx. 400g)
- 250 ml Suppe (chicken or vegetable broth)
- 1 Becher Schlagobers (1 cup heavy cream, approx. 200 ml)
- 300 g Nudeln (short pasta, e.g., penne or fusilli)
- 150 g Frischkäse (cream cheese)
- 1 Prise Salz (pinch of salt)
- 1 Messerspitze Paprikapulver (a pinch of paprika powder)
- 1 Prise Pfeffer (pinch of pepper)
Instructions
- Begin by preparing all your ingredients. Cut the chicken into bite-sized pieces, making sure they are evenly sized for even cooking. Wash the leek thoroughly to remove any grit, then slice it into rings. Clean the mushrooms with a damp cloth or brush, and cut them into quarters.
- Heat a large, deep pot or Dutch oven over medium-high heat. Add a drizzle of oil (such as olive oil or vegetable oil) to the pot. Once the oil is hot, add the chicken pieces, prepared mushrooms, and sliced leek. Sauté the mixture for about 5–7 minutes, stirring occasionally, until the chicken is lightly browned on all sides and the vegetables have softened.
- Add the can of diced tomatoes (with their juices), chicken or vegetable broth, heavy cream, and pasta to the pot. Season the mixture with salt, paprika powder, and pepper. Stir well to combine all ingredients, ensuring the pasta is mostly submerged in the liquid.
- Bring the mixture to a gentle boil over medium-high heat. Once boiling, reduce the heat to medium-low, cover the pot with a lid, and let it simmer for about 15 minutes. Stir occasionally to prevent the pasta from sticking to the bottom, and check that there is enough liquid; if the mixture looks too dry, add a little more broth or water. Cook until the pasta is al dente and the chicken is cooked through.
- Once the pasta is cooked and the sauce has thickened, add the cream cheese to the pot. Stir thoroughly until the cream cheese is fully melted and the sauce is creamy and smooth. Taste and adjust the seasoning with additional salt and pepper if needed.
- Remove the pot from the heat. Let the dish sit for a couple of minutes to allow the sauce to thicken further. Serve the One Pot Pasta mit Huhn hot, garnished with fresh chopped parsley or basil if desired.
