Ingredients

  • 12 Biskotten (ladyfingers)
  • 1 Becher Leicht-Schlagobers (light whipped cream)
  • 200 g Mascarino (or Mascarpone)
  • 2 cl Rum
  • 1 Prise Salz (pinch of salt)
  • 20 g Staubzucker (powdered sugar)
  • 100 g Staubzucker (powdered sugar)
  • 0.5 l Orangensaft (orange juice)
  • 1 Orange, abgeriebene Schale (zest of 1 orange)
  • 4 Orangenscheiben (orange slices, for garnish)
  • 4 TL Schokospäne (4 teaspoons chocolate shavings, for garnish)

Instructions

  1. Prepare all the ingredients by measuring them precisely. Zest one orange and set the zest aside. Slice another orange into thin rounds for garnish if desired.
  2. In a mixing bowl, combine the Mascarino (or Mascarpone) cheese, 20 g powdered sugar, the grated orange zest, and a pinch of salt. Using a whisk or an electric mixer, blend these ingredients together until smooth and creamy.
  3. Gradually pour in 0.5 liters of orange juice and 2 cl of rum into the mascarpone mixture, stirring constantly to ensure a smooth, lump-free cream. Mix until fully combined and the mixture is homogeneous.
  4. In a separate bowl, whip the light whipped cream (Leicht-Schlagobers) until stiff peaks form. This may take several minutes with an electric mixer. Gently fold the whipped cream into the orange-mascarpone mixture, being careful not to deflate the cream. The result should be a light, airy orange cream.
  5. Take four dessert glasses or bowls and spoon half of the orange cream mixture evenly into the bottom of each.
  6. In a shallow dish, mix together a small amount of additional orange juice, 2 cl rum, and 100 g powdered sugar to create a soaking liquid. Stir until the sugar is dissolved.
  7. One by one, briefly dip each Biskotte (ladyfinger) into the orange-rum soaking liquid, making sure they are moistened but not soggy. Place three soaked Biskotten on top of the orange cream layer in each dessert glass.
  8. Cover the Biskotten layer with the remaining orange cream, distributing it evenly amongst the dessert glasses. Smooth the tops with a spoon or spatula.
  9. Place the desserts in the refrigerator and chill for at least 15 minutes to allow the flavors to meld and the cream to firm up slightly.
  10. Before serving, garnish each portion with a fresh orange slice and a teaspoon of chocolate shavings for an elegant and delicious finish.

Notes

For best results, prepare the Orangencreme a few hours before serving to allow the flavors to fully develop and the dessert to set. If you prefer a non-alcoholic version, you can omit the rum and substitute with extra orange juice. Feel free to add more chocolate shavings or even a sprinkle of orange zest on top for extra flavor and decoration.
