Instructions

  1. Begin by gathering all the ingredients. In a large mixing bowl, add 250 grams of smooth flour, 150 grams of soft butter, 120 grams of sugar, one packet of vanilla pudding powder, 2 egg yolks, and 2 tablespoons of milk. Using a hand mixer with dough hooks or beaters, mix all the ingredients thoroughly until a dough begins to form. Once the dough starts coming together, use your hands to knead it gently on a clean surface until it becomes a smooth and cohesive dough that is not sticky. This ensures an even texture for the Puddinghörnchen.
  2. Next, shape the dough into a cylinder approximately 2 centimeters thick. Using a sharp knife, cut this dough roll into pieces about 1 centimeter thick each. Take each piece and roll it gently with your hands into a small, even roll. Then, bend these rolls into a crescent (kipferl) shape by curling the ends slightly inward. Carefully place each shaped kipferl onto a baking tray lined with parchment paper. Make sure to space them evenly to allow for slight expansion while baking.
  3. Preheat your oven to 180 degrees Celsius (356 degrees Fahrenheit). Place the baking tray with the kipferl in the center of the oven to ensure even heat distribution. Bake the Puddinghörnchen for approximately 12 minutes. Keep a close eye on them during the last few minutes; they should turn a light golden color but not brown too much, ensuring a tender texture.
  4. Once baked, remove the kipferl from the oven and allow them to cool slightly but while they are still warm, prepare the finishing touch. In a small bowl, mix powdered sugar with the entire packet of vanilla sugar to create a fragrant dusting mixture. Generously sprinkle this mixture over the warm kipferl so that the sugar adheres well, enhancing their sweetness and aroma. Let them cool completely before serving for the best texture and flavor.

Notes

For an extra indulgent touch, you can fill the kipferl with a small spoonful of vanilla pudding before baking, or drizzle melted chocolate over the cooled kipferl. Store the Puddinghörnchen in an airtight container to keep them fresh and tender for several days. These treats are perfect with a cup of coffee or tea.
