Description
Saftige Apfelscheiben treffen auf luftigen Quarkteig mit feiner Vanillenote. Goldbraun gebacken, zart körnig durch Grieß, verlockend glänzend mit Aprikosenkonfitüre. Warm, cremig und aromatisch – ein Genuss für alle Sinne.

- 2 Äpfel
- 50 g Grieß
- 1 EL Mehl
- 2 EL Aprikosenkonfitüre
- 75 ml Milch
- 3 Eier
- Butter und Semmelbrösel für die Form
- 500 g Magerquark
- 75 g Butter
- 50 g Mandelblättchen
- 1 unbehandelte Zitrone, Saft und Schale
- 75 g Zucker
Instructions
- Preheat your oven to 175°C (347°F). Prepare a baking dish by greasing it thoroughly with butter and then sprinkling it evenly with breadcrumbs, ensuring the surface is well coated to prevent sticking.
- Peel the apples and cut them into quarters. Remove the cores. On the rounded side of each apple quarter, make several shallow cuts without slicing all the way through. Drizzle the apple quarters with freshly squeezed lemon juice from the lemon to prevent browning and to add a fresh, tangy flavor.
- Separate the eggs into yolks and whites. In a large mixing bowl, beat the softened butter with the sugar and the egg yolks until the mixture is light, fluffy, and creamy. Add the finely grated zest of the lemon, the quark, milk, semolina (Grieß), and flour. Mix thoroughly until all ingredients are well incorporated and the batter is smooth.
- In a separate clean bowl, beat the egg whites with the packet of vanilla sugar until stiff peaks form. Gently fold the beaten egg whites into the quark mixture, being careful not to deflate the mixture too much. This will ensure the Auflauf is light and airy.
- Pour the prepared batter into the greased and breadcrumb-coated baking dish, spreading it out evenly. Arrange the prepared apple quarters, rounded side up, on top of the batter, pressing them in slightly. Sprinkle the almond flakes (Mandelblättchen) evenly over the top.
- Place the baking dish in the preheated oven and bake for 35 minutes. While it bakes, gently heat the apricot jam (Aprikosenkonfitüre) until it is smooth and spreadable.
- After 35 minutes of baking, remove the Auflauf briefly from the oven and carefully brush the surface with the warmed apricot jam. Return the dish to the oven and bake for an additional 10 minutes, until the top is golden brown and the apples are tender.
- Once done, remove the Quark-Auflauf from the oven and allow it to cool for a few minutes before serving. It can be enjoyed warm or at room temperature, straight from the baking dish or cut into portions.
Notes
For extra flavor, you can dust the warm Auflauf with a little powdered sugar before serving. This dessert is also delicious with a scoop of vanilla ice cream or a dollop of whipped cream. If you prefer, you can use pears instead of apples or add a sprinkle of cinnamon to the batter for a spiced variation.
