Saftige Frikadellen aus zartem Rinderhack, durchzogen von goldbraunen, knusprigen Röstzwiebeln, fein gewürzt mit Senf, frischer Petersilie, Salz und Pfeffer – aromatisch, herzhaft, unwiderstehlich knusprig.

- 600 g Rinderhackfleisch
- 1 Ei
- 250 g Zwiebeln, knusprig geröstet (Röstzwiebeln)
- 1 Bund Petersilie
- 1 EL Senf
- Salz

Instructions
- Preheat your oven to 210°C (410°F) if using conventional heat, or 180°C (356°F) if using a fan (convection) setting. Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- Take half of the crispy fried onions (Röstzwiebeln) and crush them with your hands into smaller pieces. Set the remaining half aside for later use.
- Wash the parsley thoroughly under cold water, shake off excess moisture, and finely chop the leaves and tender stems with a sharp knife.
- In a large mixing bowl, combine the ground beef, egg, mustard, the crushed Röstzwiebeln, and the chopped parsley. Season the mixture generously with salt and freshly ground black pepper.
- Using clean hands or a sturdy spoon, thoroughly mix all the ingredients together until well combined and the mixture is uniform in texture.
- With dampened hands, take portions of the meat mixture (about the size of a golf ball, roughly 40-50g each) and shape them into small, even balls. This helps ensure they cook evenly.
- Pour the remaining whole Röstzwiebeln onto a flat plate. Roll each meatball in the Röstzwiebeln, pressing gently so the crispy onions adhere to the surface all around each ball.
- Arrange the coated meatballs evenly on the prepared baking sheet, leaving a little space between each one so they cook properly.
- Place the baking sheet in the preheated oven and bake for about 10 minutes. Check that the Frikadellen are cooked through by cutting one open—there should be no pink in the center. If needed, bake for another 2-3 minutes. The Röstzwiebeln coating should be golden and crispy.
- Remove the Frikadellen from the oven and let them rest for a couple of minutes before serving. Enjoy them hot, garnished with additional fresh parsley if desired.
Notes
If you do not have ready-made crispy fried onions (Röstzwiebeln), you can make your own by thinly slicing onions and frying them until golden brown and crisp. These Frikadellen taste great both hot and cold and can be served with a side of potato salad, fresh bread, or a light green salad. For extra flavor, you can add a bit of minced garlic or a pinch of smoked paprika to the meat mixture.
