  • 1 Becher Öl
  • 2 Becher Zucker
  • 3 Becher Mehl
  • 1 Päckchen Backpulver
  • 4 Eier, getrennt
  • 1 Dose Mandarinen oder anderes Dosenobst

Instructions

  1. Preheat your oven to 200°C (390°F) and lightly grease a 26 cm (10-inch) springform pan or line it with parchment paper to prevent sticking.
  2. Carefully separate the eggs, placing the egg whites in one clean, grease-free bowl and the yolks in a large mixing bowl.
  3. Add the yogurt, oil, and sugar to the bowl with the egg yolks. Using an electric hand mixer or stand mixer, beat the mixture until it is light and creamy. This should take about 2-3 minutes.
  4. In a separate bowl, combine the flour and baking powder. Mix well to ensure the baking powder is evenly distributed throughout the flour.
  5. Gradually add the flour and baking powder mixture to the wet ingredients. Mix on low speed or with a spatula until just combined and you have a smooth batter. Be careful not to overmix.
  6. With a clean whisk or mixer attachments, beat the egg whites until they form stiff peaks. The egg whites should hold their shape when you lift the whisk out of the bowl.
  7. Gently fold the beaten egg whites into the batter in two or three additions. Use a spatula and a gentle motion to keep as much air in the egg whites as possible, resulting in a light and fluffy cake.
  8. Open the can of mandarins (or other canned fruit) and drain them thoroughly. If using larger fruit pieces, cut them into bite-sized chunks.
  9. Carefully fold the drained mandarin segments (or other fruit pieces) into the batter, ensuring they are evenly distributed throughout.
  10. Pour the finished batter into the prepared springform pan, spreading it out evenly with a spatula.
  11. Place the pan in the preheated oven and bake for approximately 60 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  12. Remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, remove the springform ring and let the cake cool completely on a wire rack before serving.

Notes

Use the empty yogurt cup as a measuring tool for the oil, sugar, and flour to ensure the correct proportions. You can substitute the mandarins with other canned fruits such as peaches, pineapples, or mixed fruit according to your preference. Make sure the fruit is well-drained to prevent excess moisture in the cake. For an extra touch, dust the cooled cake with powdered sugar before serving.
