Ingredients

  • 1 onion
  • 150 g sheep’s cheese (Schafkäse)
  • 8 eggs
  • 0.5 teaspoon salt
  • 2 tablespoons parsley (chopped)
  • Oil for frying

Instructions

  1. Peel the onion and finely chop it into small, even pieces. This will ensure that the onion cooks quickly and distributes evenly throughout the omelette.
  2. Heat a generous amount of oil in a non-stick frying pan over medium heat. Once the oil is hot, add the chopped onion and sauté it for about 3-4 minutes, stirring occasionally, until the onion becomes soft and translucent but not browned.
  3. While the onion is cooking, crumble the sheep’s cheese into small pieces. In a large mixing bowl, crack the eggs and add the salt. Beat the eggs thoroughly with a whisk or fork until the mixture is well combined and slightly frothy.
  4. Add the crumbled sheep’s cheese and chopped parsley to the beaten eggs. Mix gently to evenly distribute the cheese and herbs throughout the egg mixture.
  5. Once the onions are soft and fragrant, pour the egg, cheese, and parsley mixture into the pan over the onions. Allow the mixture to sit undisturbed for about 1-2 minutes, until the edges begin to set.
  6. With a heat-resistant spatula, gently stir the omelette from the outer edges toward the center, allowing the uncooked eggs to flow to the edges of the pan. Continue doing this for 2-3 minutes, until most of the eggs are set but the center is still slightly creamy.
  7. When the omelette is mostly set, carefully fold it in half or, if preferred, leave it open-faced. Let it cook for another 1-2 minutes on low heat until the inside is just set but still moist.
  8. Carefully slide the finished omelette onto a serving plate. Optionally, drizzle with pumpkin seed oil for an extra nutty flavor. Serve immediately while hot.

Notes

For an extra touch of flavor and visual appeal, drizzle a little pumpkin seed oil over the finished omelette just before serving. You can also add freshly ground black pepper or a sprinkle of chili flakes for a bit of heat. Serve with crusty bread or a fresh salad for a complete meal.
